SELF PORTRAIT TUESDAY/ BREAD PUDDING

Yup, these are MY mitts, holding on to a steaming dish of bread pudding. I found this recipe in our local paper in October 1975, sent in by a TV news reporter named Buck Matthews. It truly is "comfort food". And for some reason, today I seem to be craving some comfort. yummy!

BUCK MATTHEWS BREAD PUDDING

3 EGGS
1 QT. MILK
1/2 C SUGAR
2 TEAS. VANILLA
4-6 SLICES STALE BREAD (I USED 8 W.W. ROLLS, LEFTOVER FROM SATURDAY)
NUTMEG

BEAT EGGS. ADD MILK, SUGAR, AND VANILLA IN 2 QT. CASSEROLE DISH. MIX THOROUGHLY. ADD BREAD, TORN IN BITE SIZE PIECES, SUBMERGING IT IN MILK MIXTURE. SPRINKLE TOP WITH NUGMEG. BAKE UNCOVERED, 55-60 MIN. AT 400 DEGREES.

I serve this warm or cold (cold is my personal preference), with milk poured over the top. If your waistline allows, use half and half. (mine doesn't)

CHICKEN SOUP FOR THE SOUL!

Tell me, is there anything better than a steaming hot bowl of homemade chicken noodle soup and a pan of hot, whole wheat rolls for the soul? Not on a blustery day like we have right now!! With wind chills in the negative 10, I'd say this is just what the doctor ordered.
YUM! Big chunks of carrots and celery, tender, whole wheat noodles, and melt-in-your-mouth bites of chicken. Nope...nothin better.

FARMGIRL BOOK!


My newest book, a birthday gift from my dad (lest you be confused, dad sends me a nice sum of $ and I get to buy what I like!). Truly an inspirational book for me, the farmgirl wannabe. I am in the process of creating my sourdough starter...a recipe from this book. I have used sourdough starters in the past, and really enjoyed the distinctive flavor they impart to ordinary bread recipes. And sourdough pancakes are out of this world. Since we are eating healthier these days, this starter, (as recommended in the book) is created from organic whole wheat bread flour. Will keep you updated on the progress.

NEW FAVORITE!

tHIS IS MY NEW, FAVORITE COOKBOOK. I STARTED FOLLOWING SOUTH BEACH DIET PRINCIPLES A YEAR AND A HALF AGO, LOSING ABOUT 40# IN THE PROCESS. COMBINED WITH MY RUNNING PROGRAM, I HAVE BEEN ABLE TO KEEP IT OFF!! I HAVE BEEN USING THIS COOKBOOK SEVERAL TIMES A WEEK, AND SO FAR HAVE FOUND EVERY RECIPE I TRIED TO BE MOST TASTY. MORE IMPORTANTLY, MY FAMILY HAS ALSO FOUND THIS TO BE TRUE. THIS ONE IS A KEEPER!

SAM AND AVERY

Our two youngest, taken maybe 12 years ago. It seems like just yesterday we were helping them on with their snowpants and boots. Soon Sam will be driving, and Avery will be following close behind. Geez, I miss those days!

ME AND MY BABY SIS!

An old photo of Elena and I, taken at an amusement park near Pawtucket, R.I. called "Jolly Charlies". I was probably around 6 years old, Elena about 4. She's been gone now almost 4 years...passed away very unexpectedly. Praise God...I will see her again someday. I miss her greatly.

MY PEPERE!

Here is an old photo of my dad and his father, my Pepere. This was taken maybe 3 years before my Pepere passed away into Glory. He got born-again just months before he died. After he got saved, there was no stopping him! He would call his daughter, my Aunt Janet, (who led him to the Lord), and tell her to come over and bring her Bible...he had someone he wanted her to talk to! He didn't feel comfortable in presenting the gospel to them, but he knew Janet could do a good job! And she did...for his few remaining months on this earth, she was able to lead many of my Pepere's friends to the Lord! Now we are praying for the same kind of miracle for my dad. And Aunt Janet is still in the picture...wooing dad with the Word of God. May the Holy Spirit continue His job of drawing dad to salvation!

CHILDHOOD CHICKEN MEMORIES

When I was growing up, I spent every summer, from the day school let out, till a few days before school started up again, with my Memere and Pepere (French for grandma and grandpa) in Rhode Island. This is an old picture of their Rhode Island Reds, outside the chicken coop for a brief foray into the yard. I remember as a child, going into the hen house with my Memere, and gathering up the days eggs. She would pack them in cartons, and my Pepere would take them down to the Bishop Bends Club, where he would sell them to the members. My Memere and Pepere have been gone a long time, and I miss them dearly. Perhaps those childhood memories are why I am longing for chicks of my own. Maybe thats why I am a Farmgirl at heart.

It's my birthday!

YES! It's my birthday, all right! Not a "regular, I'm a year older" kind of birthday, tho. This is my 28th birthday...28 years ago today I was born into the kingdom of God! Yup, 28 years ago, I became a believer in the Lord Jesus Christ. I once was lost, but now I'm found. Was blind, but now I see. Well, you know, being raised a catholic...I ALWAYS believed in the Trinity, the virgin birth, the death, burial, and resurrection of Jesus, etc. I "believed" all the right things. BUT...I was not a "believer". The word "believe" means "to trust on, believe in, rely on". And I had done none of those things. Until that day, 28 years ago, when I came to Him, asked His forgiveness, and truly BELIEVED. OH, THE BLOOD OF JESUS, IT WASHED ME WHITE AS SNOW!!!
