Here comes the sun....it's all right

I do believe we have found a place to call home.

It's not the prettiest house on the block.

Actually, it's not even a house, per se.

And there are only 3 houses on the block...

so it is definitely out in the boonies a bit.

A single wide with 3 bedrooms

(though one could barely qualify as it is teensy tiny)

2 full baths..

a laundry "room"

And...best of all...

sits on 1 acre...

with a clothesline...

pets are sorta welcome....

and we have free reign as far as putting a garden in.

And...ta da....

It is only 2 blocks down the road from one of my dearest friends, Angie, of Maple Valley Farms fame.

I know....you all must be so jealous!

We will be VERY busy this week as we try to move in using only a large trailer and with pretty much no help as all friends and family are working during the week.

And....woot! woot!

I will be flying out to Montana in 9 days to see our daughter and her family which now includes our precious new grandson, Matthew Jay, born January 26th.

We have a brand new grandson!

Our oldest daughter Giselle and her husband Jon had their 2nd baby yesterday morning.

They chose to have a home birth with a midwife assisting.

I am all for home births...except when it comes to my own flesh and blood having one!

Then I am as nervous as a cat....!!!

Praise God all went well, with a quick, but HARD labor.

She had been having contractions for several days which really helped move things along when the actual labor began.

In less than 5 hours baby was born!

Proud as punch papa, Jon.

We are so very grateful Giselle has an amazing godly husband who has made an amazing godly father.

We know she is in the best of hands, and we love Jon to pieces.

Trena is so excited to be able to finally meet and get to hold her new baby brother!

9 months is a very long time to wait when you are nearly 3 years old...

Don't you just love the look on Trena's face...so dang cute in her pajamas!

Pete and I are doing OK.

We really appreciate the support and offers of help that have come in via the blog and Facebook.

We are looking for steady employment...

full time for him...

part time for me.

I will be flying out to Montana (courtesy of Giselle and Jon) in the next couple of weeks to spend time with Giselle and her family so anything I might find work related will have to wait till I get some one on one with them!

I pray the old saying is true...

"When God closes a door, he always opens a window".

Cause right now all the doors are closed shut.

And locked.

Double bolted, even.

We don't make enough to qualify to rent pretty much anything out there.

Even the trailer parks say we can't afford the lot rent.

Even when the mobile home is free!

And the ghetto?

Nope...not enough to get a place even in the ghetto.

God is bigger than that.

He will have to make a way where there seems to be no way.

And that's the truth.

The party's over...

The party's over....

The pity party, that is.

I am taking 2 steps forward, and one step back, but I think I am moving in the right direction for a change!

There are indeed, things I was put on this earth for, and all of the moaning and pissing about my circumstances has done nothing to further advance what HE has for me to do.

If I want revival in my family, it must begin with me.

If I want to see change, it must begin with me.

“Do you really want to see a revival begin? Then go back to your home and draw a circle around you on the floor. Then get down on your knees in the middle of the circle and ask God to convert everybody inside that circle. When you do that, and God answers, you are experiencing the start of revival.”

I saw that quote recently and it nearly broke my heart.

I must first get my walk with the Lord back where it belongs so I can finish what HE has for me to do.

I am asking God to begin with me....

Me....in the middle of that tiny circle.

Asking Him to do a new work in my heart.

To give me a passion for HIS will in my life.

To commit to praying and reading His Word

Then, and only then will He be able to move.

I cannot begin to tell you all what an encouragement your comments have been to me.

Made me cry, they did.

I have good friends/family in this blogging world...for sure.

I have been thinking a lot about what this new year will bring and how different it will look from the past 10 years.

I knew I needed something, anything...from the Lord to give me hope.

Reading the Word, I came across several scriptures with the same theme....

Content....

"Not that I speak in regard to need, for I have learned in whatever state I am, to be content..."

Philippians 4:11

Can I do that?

Be content in whatever state I am?

"Now godliness with contentment is great gain.

For we brought nothing into the world, and it is certain we can carry nothing out.

And having food and clothing, with these we shall be content."

1 Timothy 6-8

Oh, oh....Looks like godliness needs to go hand in hand with the contentment for me to grow...

Confession time: I have not been very godly of late.

Angry...

Bitter...

Even a bit of ...gasp!...hatred

Yup...I have been a hater

NOT content.

And definitely NOT godly.

I have food.

I have clothing.

But I have not been godly or content.

Sounds like this farmgirl needs to do some repenting.

Deep breath....and keep breathing

Our home...circa 2001

We lost our home.

10 days before Christmas....

We had to move out.....

Foreclosed.

There...I've said it.

The economy has not been good to West Michigan.

My husband is in the building trade....

just a sub contractor...siding, window replacements, remodeling....

And there was pretty much no work to be found.

Builders were hiring cheap, illegal labor rather than seasoned professionals

We struggled for the past few years...

I did what I could...which was not much.

2 bad knees...

Arthritis in my hips and hands...

Kind of puts some limits on you...

I've cried...

Gotten angry....

Cried some more....

Been humiliated and humbled...

We built this home ourselves...

Pretty much did the entire thing on our own, except for digging the basement and pouring the foundation....

The house has been a part of my identity for so long, I am not sure who I am anymore...

Where do I go from here?

I am not sure.

Right now we are staying at a relatives home...with our 3 cats and doofus Golden Retriever, Beau.

We are thankful to have a roof over our heads....

And thankful all our children have moved out and are on their own...

Looking for a place to rent has been a nightmare.

If it didn't mean we would never see our kids, we would high tail it to the south.

Pete is close to early social security, but it will barely cover expenses.

My heart is broken.

I am not sure where to take my blog from here.

Too much other stuff to think about for right now.

Those of you who are pray-ers...

I AM THE LORD'S

I AM THE LORD'S

"One will say, I am the Lord's; and another will call himself by the name of Jacob; and another will write {even brand or tattoo} upon his hand "I AM THE LORD'S"..." Isaiah 44:5

A few years ago I read something concerning our hands and how differently we might act if every time we reached for something or touched someone, we saw "The Lord's" written across our palm.
It got me to thinkin'.
So on Thanksgiving morning that year, after putting the bird in the oven, I wrote a note to myself across my right palm.
A gentle (or not) reminder of who I belong to.
And who I represent.
I had to choose how my hand was going to be used.
To bless or to curse.
To caress or to clench in anger.
The words in red were not only a reminder of how I use my hands.
It was a reminder of how I use my tongue.
Every time I saw those words in red, I stopped to think before I spoke.
To "speak the truth in love", or to hold my thoughts to myself.
To gossip, or to edify.

I won't always have "The Lord's" written across my palm.
A load of dishes and it is all but faded away.
But I WILL remember forever, the day "THE LORD'S", written in red, played a significant part of Thanksgiving, 2007.

Forward to November 2011.....
This post is as appropriate today as it was the 1st time I posted it, if not more so.

Have a most blessed Thanksgiving, my friends, as we remember Him who is worthy of ALL our praise and thanksgiving.

Starting to look all bare here at the farmette.

The frost has pretty much taken out all the flowers except for one lone calendula plant in a clay pot.

I am thinking I will harvest it this weekend and use the petals for another batch of Calendula soap.

We are making the barest minimal of plans for Thanksgiving.

Our oldest daughter and her family will not be here at all for any of the holidays this season as she is due with her 2nd baby the end of January. This is a huge blessing for us as she has miscarried time and again after her 1st baby, our granddaughter Trena, was born nearly 3 years ago.

We are sad they cannot be with us, but happy because the circumstances are awesome!

Still lots going on here, in spite of the windy cool weather.

I am gearing up for my big soap sale, coming up next week....

I hope!

Still wrapping and labeling, so I will see how much I can get done over the weekend.

Frost, Fog, & French Bread

A few mornings ago we had a hard frost.

Threw some clothes on and quick grabbed my camera.

THIS is my favorite of all the ones I took....

You can actually see the bits of frostbite on the rose.

My Rugosa rose bush is magnificent.

It is only supposed to get 4-5 feet tall, but it has far surpassed that.

The first thing to bloom in the gardens, and there are still roses on it come the first frost.

Shaping french bread

I have a new sourdough starter, Ischia, from a food swap I was involved in a few weeks ago.

I have been messing around with several new recipes and have been experimenting with some authentic french sourdoughs.

One nice thing about authentic french bread is there are only 4 ingredients...

flour, yeast (or sourdough starter), salt, and water.

The other nice thing about french bread....

it tastes good!

Nothing fancy, just good bread.

Final step before rising

Using sourdough starter is a bit tricky, as the rise time all depends on the strength of your starter as well as the temperature of the house.

I have to invest in a bread slasher, for sure.

Here I used a sharp knife, but obviously did not go down far enough into the dough.

Nothin' says lovin' like something from the oven....

This was really tasty, but needs some improvement.

Thankfully, flour is cheap, cheap, cheap!

I don't have a recipe for you, but there are hundreds of variations on the net.

Alex was just 3 months old when he died, and he has left a giant hole in our hearts.

Our consolation is that one day we shall see him again, healed and made whole.

We had the family over the Sunday before Alex died for a big family dinner, not knowing he would only be with us another 2 days.

At this point he was not able to cry anymore, but he could make little noises

A Plethora of Autumn Busyness

Calendula Infused Oil

I gathered organic calendula petals way back in July and infused them in an olive oil base.

Yesterday I mixed the strained oil with...

Natural beeswax, lavender oil, and vitamin E

...the above ingredients and made...

Calendula Salve

...this!

Calendula salve is good for a plethora of ailments.

Diaper rash, chapped lips, scrapes, scratches, rashes, etc.

I have some at my bedside table for soft nighttime lips and chapped hands.

You can do what you want with yours!

Internet searches show this sells for up to $12.99 for an ounce.

I made 6 4oz jars for under $5.00

Pear & Ginger preserves and Spiced Cranberries

I am attending a homemade/handmade swap this Sunday and wanted to add a few specialty items to my plethora of goodies I am swapping.

The pears were perfectly ripe (see photo below) at the farmers market on Saturday, along with the 1st of the locally grown cranberries.

Small batch preserving is right up my alley, as I am not one to go through 12 jars of any one kind of jam in a years time.

The Spiced Cranberries will be perfect served over a block of cream cheese during holiday entertaining.

Perfect to bring as a hostess gift, too!

Apple Grunt, revisited

APPLE GRUNT

It's apple season here in West Michigan, so I thought I would pull this old post out of the archives and re-visit it!

Long, long ago, as a young girl growing up, we lived a few doors down from a good Catholic family, with, shall we say, MANY children! Mrs. Thayer was a stay-at-home mom, while my mom was a single parent, working in a factory. One of the advantages of living near a good Catholic family was the many children they had. Mr. & Mrs. T had, I think, 12 of them. So...no matter what your age, you could always find someone to play with at the T's! I had Joanie, my sis had Jean Ann...and unbeknownest to me...
Farmboy had Dave, 2nd oldest of the T's.
Mrs. Thayer baked. My mom did not.
One of Mrs. T's favorites was Apple Grunt.
And whenever Mrs. T baked Apple Grunt, I was there, begging from Joanie. So...Joanie would sneak me a piece of the familys dessert, and I would be happy.
Meanwhile...
Dave T. was sneakin' Farmboy a piece of the dessert.
Keep in mind...
I did not even know Farmboy existed at this point in time.
He was 3 years older, and lived 6 blocks away, but our paths had never crossed. (tho he says he remembers me as the cute 6th grader from St. James Parochial School...but I kind of doubt it!!)
After we were married, I got the coveted recipe from Mrs. Thayer, and have been making it at least once every winter since then.

Apple Grunt

6-8 apples, peeled, cored, sliced
1 TBL cinnamon
1 cup sugar
3 TBL flour
2 teas. nutmeg
Mix above and place in well buttered 8x8 pan.

In separate bowl:

1 cup flour
1/2 cup sugar
1 egg
dash salt
1 TBL melted butter
1/2 cup milk
dash vanilla
Mix and pour over apples.
Bake at 350 for 1 hour.

Memories are made of this.

Married September 18, 1971

Nah...I"M not 40!
Just been married that long!

Pete and I were sorta high school sweethearts.
I met him when I was 16 and just going into my junior year.
He had just graduated that June and was off to the local community college.
We got married the September after I graduated, and our 1st born, Giselle, was born 18 months later.
Gina, our 2nd, was born 2 1/2 years later.

Quite honestly, we were a train wreck.
A divorce waiting to happen.
Stupid, selfish, immature, and ungodly.
Pretty much says it all.

Long story short...

I got saved, born again, in February of 1978.
The conviction of the Holy Spirit was SO real.

Pete followed shortly thereafter, in May that same year.

There was no turning back.
Forever changed.

I ALWAYS testify that the ONLY reason we are still married is His mercy and grace.
I can still hardly believe He saved a wretch like me.
The worst of all sinners.
For truly, I once was lost, but now I'm found.
I was blind, but now I see.

After we got saved we had 3 more children.
Krystal, now 29.
Sam, now 22.
Avery, now 19.

Garden Herbs

I have made my own bouquet garni in the past, but none looked as beautiful as those from my friend Ang, over at Parisienne Farmgirl.

Taking my cues from her, I gathered up what I could from my own herb garden and set to work.

The end product, tho not as visually appealing as Ang's, will be just as tasty!

I am drying these out in the sun for a couple of days, but I think to hasten the process I will pop them in my dehydrator for a few hours.

One of my favorite food blogs is 101 Cookbooks, written by Heidi Swanson.

She recently posted this recipe, and I knew I had to try it.

Easy-peasy for sure, and I had all of the ingredients on hand so....

Heidi's Magic Sauce

I have already drizzled a bit on homemade hummus (mmmm...)

and also on a bit of leftover humdrum rice.(yummo)

I will also be trying it on a chicken/sun-dried tomato pasta dish later this week.

The only thing I did differently was to just break my bay leaf in a couple of pieces, not grind it up.

Just my own personal feelings about eating bay leaves...

tho Heidi says it is perfectly fine.

Perhaps with fresh bay, which is very soft and tender...

which mine is definitely not.

I would definitely say this is a keeper...

I have been extra busy this canning season, using my OLD pressure canner to can pinto beans, ground beef, stew, salsa, tomatoes, and peaches.

The beauty of pressure canning is the lack of heat in the kitchen.

No steamy hot water baths, just a medium flame on the burner, with no heat escaping the pot.

Now...if only I had a canner that wasn't from the Flintstones era, I think I would be happy!

NOT cheap...I have checked Craigs List and e-bay....

So I will continue with my "vintage" one until something better comes along.

Vintage (read: old) pressure canner

I dug out my pressure canner from the abyss and put it to good use this week.

We canned tomatoes, salsa, more tomatoes, and ground beef.

Ping, ping, ping!

Our CSA grows a plethora of delicious, organic tomatoes...

I am all for grass-fed beef, and use it most of the time.

And most everything we do eat is organic, healthy food.

However, angus chuck was on sale this week for less than $2 a pound (that's almost 1/2 off!) and I wanted to put some up for the winter months.

This will be perfect for soups, casseroles, sloppy joes, or tacos.

I've been throwing away the greens off of beets for years, not knowing they were a veritable goldmine of goodness.

Those, along with any kale, chard, or parsley I don't get to, goes into the dehydrator.

After they are dry, I crush them with my hands to break them up, removing any tough stems.

They then go into the blender and get pulsed to a fine powder.

I have been using a heaping teaspoon in my morning kefir smoothie.

Really...you can't taste it!

Sheesh...I hope to get back to regular blogging updates as soon as the canning season slows down.

I have missed stopping by my favorite blogs and feel like I've been away on vacation!

Elderberry syrup...

Elderflower tincture

I gathered elderflowers in July and covered them with vodka for a tincture.
Strained them this morning into these cute little bottles.

Bottled Elderflower tincture

Used to help alleviate the symptoms of hayfever, arthritis, and chronic congestion.
It also has a long history of soothing and relaxing frayed nerves...
Mmmm....I'll take a shot of that!

Elderberry syrup

Typically used for colds and coughs.
(But also good on pancakes!)

I gathered 2 cups of elderberries from our CSA farm and combined them with 6 cups of water.
I then added about a 1" chunk of fresh peeled ginger, cut into several smaller pieces.
Bring that to a boil then lower the heat and simmer for 45 minutes.
Strain.
Add 1 cup (or more to taste) raw honey.
Stir to dissolve.

I then separated the batch into two bottles, adding 4oz of vodka to one of them.

Just for the heck of it.

Cause that's how I roll.

(And because some recipes called for it and some didn't.)

I will put the tinctures in a dark spot in our closet and the syrup will go into the basement fridge for winter colds and general aches and pains.

It's peak preserving time here in West Michigan, so I am off to do some fermenting, dehydrating, and canning.

Beeswax for salves

Lots going on here at our little farmette...
We have some close friends and their children staying with us while they house hunt, so the place is full of activity!
The garden has pretty much gone to seed with all the crazy weather here in the midwest.
Heavy rains in June, then extreme heat in July does not make for a prolific garden.
Fortunately our farmers market will be able to fill in the gaps for canning and preserving.

Lemon balm/eucalyptus oil with beeswax in my vintage double boiler

Since taking the foraging classes this summer, I have been dabbling in more natural remedies with wild things found in and around my gardens.
The lemon balm salve should be good for sore muscles, but Pete is addicted to Aspercreme and won't let me try this out on him!
He has so many aches and pains by the end of the day that he doesn't want to take a chance on something "different"!
Perhaps I can start him out on a combination of the two and slowly use a bigger ratio of the homemade?

Rustic Apricot Galette

With the heat of July there was not much baking going on, but I could not resist a quart of fresh apricots at the market.
What I like about a galette is it's simplicity and lack of pretention.
No fancy/schmancy crust here!
Just a sheet of puff pastry filled with sliced apricots mixed with the slightest bit of honey.
Bake as directed, and mmmm...

Taken at our CSA farm during our walk on the wild side class, there is an abundance of this stuff.
Everywhere!
And it is supposed to make an excellent tea, which is why I will be meandering our little property to see how much I can gather.
I am really enjoying taking a closer look at what God has provided for us.
Digging deeper into His provision AND His Word.
For there are rough times coming, and we need to be well-armed.

Summer is mostly gone and I have been forced to slow down and enjoy what little is left.

Priorities and boundaries must be set if anything is to get done...
It's all good, tho.
I am finally taking time to enjoy what the Lord has done for me...

Let there be light!...and why I cannot write a cookbook

Kitchen counter light

A couple years ago I bought 2 small industrial, aluminum lamps for $1 each....
no switches, just plug 'em in for light, and unplug when you're done.
Typically to be used in a garage or work space in the basement.

In one area of the kitchen I have had very little light.
I had the cutest tiny chandelier, but it was pretty much for decorative purposes only, throwing off only enough light to make pretty shadows as a kitchen night light.

Enter Pintarest inspiration....

I saw a photo somewhere of a blue industrial lamp used in a kitchen...
so....

We bought a heavy duty toggle switch and a can of tiffany blue spray paint and....

Voila!

And there was light!

A lot of light!

75 watts of light!

Plenty of light to chop vegetables by.

Homemade blueberry maple syrup

Blueberries are in season right now, and one of the many uses for these gems is in/on pancakes.

I found a recipe for blueberry syrup that was easy-peasy and made some this week with organic berries from the farmers market.

Chive blossom vinegar...done!

A few weeks ago I told you how to make your own chive blossom vinegar.
After a few weeks of marinating the blossoms with white wine vinegar, I strained and bottled it.
What a beautiful color, and delicious, too!

a not-too-sweet evening snack!

Flatbread with honey,thyme and sea salt

Found this recipe at Smitten Kitchen, and once again, a real winner from this blog..
Crispy flatbread baked with salty cheese, then drizzled with raw honey, topped with sea salt and fresh garden thyme.
Perfect on the patio with a glass of vino...
Mmmmm...

Now...on to why I cannot write a cookbook of my very own...
(as many, many have urged me to write one....I am honored...)

CAUSE NEARLY EVERYTHING I MAKE/CREATE IS SOMEONE ELSE'S RECIPE!

I would be hauled off to court for plagiarism!

Oh, I know...I tweak recipes to fit my own personal preferences all the time, so most recipes would not be exactly alike...
but definitely enough alike to haul my fanny into court!

So...I will continue to try new things...
things you may not have heard about...
post the recipes or link to where I have found them...

And leave well enough alone!

Tinctures, Salves, and (love) Potions

Beautiful, lily-white Elderflower

Two weeks ago while at my foraging class, we were taught about Elderflower and it's many uses.
Elderflower honey, wine, and tinctures.

I had some local honey here at home, so some of the elderflowers have been sitting in it for a couple of weeks. Eventually I will strain them out and have infused elderflower honey for tea this winter.

Elderflower Tincture

So, basically a tincture is an infusion of your herb/flower of choice and alcohol.
I chose cheap vodka, as that was the most accessible.
Fill up a quart jar with elderflower and top off with 3 parts vodka to 1 part water.
Leave in a dark place for several weeks, shaking the jar every day.
After several weeks, strain the elderflowers and store the tincture in dark bottles in a cool place.

Elderflower tincture is said to be useful in slowing down viral infections and may prevent flu.
Also reported to lessen the symptoms of hay fever in the spring.
Dosage may vary with the symptoms.

I don't have allergies, and I am not prone to the flu...
I just thought it would be a fun, easy way to learn a little something new!

I also made some elderflower syrup, which was delicious in the stinging nettle tea!

Calendula oil
Salve in the making....

Another item on my "to try" list is Calendula salve.
Reported to be excellent for diaper rash, it is also used to treat minor cuts and scrapes and for chapped lips, of which I have pretty much all winter here in Michigan.

Easy peasy to make, I simply pulled the petals from some organic calendula flowers.
Gathering a full 1 cup, I then covered with 2 cups of olive oil. (extra-virgin not necessary)
Let sit in a sunny window for anywhere from 1 week to several months.
It will eventually get mixed with some local beeswax to produce a salve.
The plan is for a small jar of this to be on my nightstand for my nightly ritual of a heavy coating of lip balm.

Vanilla bean infused vodka

Tho the container is an old bourbon bottle I found, the ingredients for my homemade vanilla are excruciatingly simple...
vanilla beans (gifted to me), and the cheapest vodka I could find.
Leave it in a dark cupboard, and shake as often as you do the elderflower tincture!

I am quite certain really good vodka (or bourbon!) would be preferable, but the budget does not allow for that!
So, we make do with what we have, and I am sure it will be just fine.

aka: Strawberry Vodka Schnappes

A combination of several recipes, this is a wonderfully aromatic after-dinner libation.
2# of organic strawberries, stemmed and cut into pieces in a 1/2 gal. jar.
Cover with 4 cups of (again) cheap vodka.
Leave in a cool, dark place for several days, shaking the jar each day.
After anywhere from 4-8 days, strain fruit from liquid.
Place liquid in a separate jar and put back in the dark place.
Take your berries and sprinkle with about 1/2 cup of sugar and place in it's own jar.
After a couple of days, liquid will have oozed from the berries.
Strain the liquid, and add it to the original vodka/berry mixture.
Repeat with the sugar and berries up to 4 times, straining every couple of days and adding to the

beautiful ruby colored vodka.
By the time all is said and done, you should have about 6-7 cups of the most wonderful tasting, fruity vodka EVER.
No fake strawberry flavorings....yuck.

Bottle and keep in the freezer for those wicked hot evenings out on the deck.
Just a small glass now....cause I think it could pack a little bit of a punch!

This would work with pretty much any fruit you could think of....
I am thinkin' apricots?

We might be having a few of those wicked hot nights this week, with temps forecast to be in the mid 90's

Stinging Nettle tea

Organic Stinging Nettle

Gathered from right here around our pond, Stinging Nettle is one of the most nutrient dense plants available.
High in iron, vitamin C, fiber, and a host of other goodies, make it one of the best things you can put into your body.
You may add it to a stir fry of other mixed greens and add it to a frittata.
You may roll the leaves up, stingers on the inside, and just pop it in your mouth.
Or you may dry it for herbal tea.

Stinging Nettle infusion

I dried all of mine in my dehydrator, with a total of about 3 quarts worth.

To make a tea, take 1 cup of dried nettle to 4 cups of boiling water.
Let steep overnight to get every bit of goodness from the nettle.

Iced Stinging Nettle tea

After straining a glass and adding some ice, I sweetened with just a bit of Elderflower syrup.

It has a nice, grassy taste which paired perfectly with the flowery Elderflower syrup.

I am always experimenting in the kitchen, and the foraging class I am taking has given me a
new -found appreciation for what is likely right under my nose!

Chive Blossom Vinegar & Garlic Knots

Chive blossoms

Our first CSA pick-up 2 weeks ago included a large bunch of chives.
I had just come across a recipe for chive blossom vinegar and was anxious to give it a try...
perfect timing!

Cut chive blossoms off and wash/spin dry in salad spinner.

One pint jar stuffed to the top took all the blossoms I had.
Fill jar with a mild vinegar...
I used a white wine vinegar, but if all you have is the plain, ol' white, then just use that!
Let set in a cool, dark place for a couple of weeks, then strain out the blossoms for a nice, mild oniony flavored vinegar!

Garlic Knots

Another great recipe from Pam, at "For the Love of Cooking"!

I improvised a bit from her recipe, as I do not use a bread machine.
Instead I throw everything in my Kitchen Aid standing mixer and "knead" for about 8 minutes.
The other change I made was I added the minced garlic directly to the dough as it was mixing, for an even greater garlic flavor.
Oh, and of course I upped the garlic....
cause I'm that kind of girl.

These were SO good!
Yeasty, garlicky, basily, and light as a feather.

They are on the menu for tonight with some simple. stuffed shells and of course, a HUGE salad!
Hmmm....perhaps the vinaigrette will be made with the chive blossom vinegar!

Bread dipping herbs...YUM!

Dipping oil with romano
Served in my chippy plate which I am too sentimental to toss as it came from my dear friend, Joy.

My awesome friend Anna sent me a link to this recipe, which I then tweaked a bit to fit my current stash of fresh and dried herbs.
I put this together in just minutes and then sliced some fresh bread for a quick hors d'oeuvre before supper.

SO delicious!

Ingredients:

2 TBL minced basil (growing profusely in the garden now!)
1TBL chopped parsley (barely up in the garden, but I took some anyways)
1 TBL minced garlic
1 teas. dried thyme (next thyme I will use the fresh from the garden)
1 teas. dried oregano
1 teas. black pepper
1/2 teas. kosher salt (leave this out if you will be adding grated cheese)
1/2 teas. chopped rosemary (also fresh from the garden!)
1/4 teas. red pepper flakes
1 teas. olive oil
1/2 teas. lemon juice

Combine all ingredients in a small food processor. I do not own a small one,so I used my stick blender which is not very efficient:(
Chop till all ingredients are roughly the same.
NOW stir in olive oil and lemon juice.
Taste....add more lemon juice if needed...I did.

To serve: Combine about 1 1/2 teas. herb blend to 3-4 T good olive oil on a small plate.
Add a quick grating of cheese...romano or parmesan is traditional.

Dip bread into mixture.

Swoon with taste bud delight!
Refrigerate remaining blend...I am thinking it should last a week or two. I think a very thin layer of olive oil over the top would preserve it for even longer.

Anna made up a large batch of this and added small jars of it to her "Thank You" baskets for her children's teachers this spring.

Wouldn't you love for someone to give this to you????

Homemade Creme Fraiche

The Players

Homemade creme fraiche is easy peasy to make in your own kitchen!

1 cup heavy cream, preferably raw, but definitely NOT ultra pasteurized.
I refuse to skim the top off the raw milk I get, so I use the Country Fresh brand pictured here.

2 TBL of buttermilk...I used a non homogenized buttermilk, but any buttermilk should work.

Using VERY clean utensils, mix the heavy cream with the buttermilk, whisking till blended.

Fermenting creme fraiche

Pour the mixture in a pint jar and cover with a clean cloth and secure with a rubber band.

Let set in a warm spot for 24 hours.

After 24 hours your creme fraiche will be the consistency of a thin pudding.
Stick it in the fridge.
No worries....

Thick, creamy creme fraiche!

After a few hours in the fridge, LOOK what you have!

French Green Lentil Vegetable Soup

Creme fraiche is similar to sour cream only, uh...BETTER!
Here I put just a tablespoon in some soup I threw together this morning for a quick lunch.

It would also be sublime on a bowl of fresh strawberries, or any kind of berries!
Or how about a dollop over a decadent flourless chocolate cake?

This should keep about 2 weeks in the fridge, if you don't keep going back for just another tiny taste.

Pam has never steered me wrong, and I have tried MANY of her recipes.

Garden Shame

Nope.
These are not luscious grasses planted on purpose.
These are weeds.
And they are everywhere throughout the perennial gardens.
Some not so bad, as I have tried to get out there on a regular basis.
We bit off way more than we could chew.
When we built these beds, I was a much stronger woman.
I was running 3 miles a day, 5 days a week.
I was parking at the farthest end of any parking lot I happened to be in, just to get in some extra walking.

I was strong then.

Today?
Not so much.

Knee replacement surgery last year really took it's toll on me.
I should be getting the other one done, but no more insurance, so no surgery.
Arthritis is knocking at the back door of my hands, so after an hour in the gardens I am pretty much done for the day.

I am thinking that when the weather cools down later in the week I might tear out the few perennials I can spot, and just plow the whole thing under.

On second thought maybe I'll just try to pass the weeds off as luscious grasses.

From a distance you can hardly tell the difference!

Walk On the Wild Side

Lisa Rose Starner

Lisa Rose is a backyard herbalist who is teaching classes at our CSA, Trillium Haven Farm.
She is doing 5 once-a-month walks thru the wild areas of the farm starting last week.
This class was fascinating!
I had no idea what went on beyond the farms pristine gardens!
Weeds and native plants everywhere....some good....
and some not so good.

Stinging Nettle

It's called Stinging Nettle for a reason...ouch.
But Lisa Rose showed us how to eat it without getting stung, so...
very carefully following her instructions...we all tried it.
Tasty! Kind of reminded me of a fresh green bean.
But there were warnings that came along with this plant, too....
DO NOT FORAGE FOR NETTLES ALONG THE DITCH.
Hmm....why?

AKA: Poison Hemlock

THIS is why we were never, ever to forage for nettles along the ditch....cause THIS was lurking.
And tho nettles and hemlock don't look anything alike, you could easily reach down to pick some nettles and not see one of the smaller poison hemlocks growing right next to them.
And that would be a
VERY.BAD.THING. INDEED.

We were duly warned:
Do not touch, bruise, or otherwise go near this bad boy.
She didn't have to tell me twice!

Garlic Mustard

Tasty, bitter green...perfect pick-me-up after a winter of heavy stews and soups.
Pick the entire plant...pull it out root and all.
The stuff is invasive so no worries...there will be plenty for next year!

Honeysuckle

Remember sucking the "honey" out of the tiny flower?
That's just what we did!
Lisa Rose will harvest the flowers and put them in honey to flavor it.
Mmmmm...honeysuckle honey!

Chickweed

Finally....
Something I recognized!
This stuff is everywhere in my perennial beds in the spring.
Lisa Rose uses olive oil and chickweed as the base for a salve that she makes.

I am very excited to go back the end of June to see what else is growing wild at the farm.

Not certain I want to throw out my Neosporin quite yet, but I am very curious as to how these herbs and weeds fit into an organic lifestyle.

For now tho I am quite comfortable going to the farm and foraging stinging nettles (away from the ditch!) for a pot of tea, and garlic mustard for my wild(er) salad!

Homemade Lara Bars

I've been messin' around with a lot of different recipes this winter, knowing I was responsible for teaching a class at our CSA this year.
For the most part my experiments have been on fermenting, dehydrating and preserving.
But on occasion i sneak in something I want to try just for the fun of it!

My friend Lydia posted about these recently, and since they were on my "bucket list" of recipes I wanted to try, I thought her recipe would be the perfect springboard for what I wanted to do.
And after seeing the price of these in the stores (somewhere near $2 each), I knew I could do better.
Basically all a LaraBar consists of is dried fruit and nuts.
Now comes the fun part!
I used what I had on hand and stuck with the ratios I had read about:

1/4 cup organic, dried figs
1/4 cup dried blueberries
1/8 teas. cinnamon
1 pinch salt
1 teas. vanilla (optional...I did not use)
1/3 cup nuts

In a food processor place all of the dried fruit and seasonings, pulsing till a paste is formed.
Remove fruit from processor, but do not clean processor.
Put nuts in processor, pulsing till very finely chopped, but stopping short of nut butter!
Add your fruit paste to nuts and pulse a few times to combine.
Roll into balls or shape into bars....your choice.
Wrap in plastic wrap or cover tightly.

Now for the experimentation;
next time I am going to use some of my fermented apricots as the fruit and possibly macadamia nuts.
Or how about dried pineapple with walnuts?
Mini chocolate chips, dates, and cashews?
Cherries, cranberries, pecans?
Really...the possibilities are endless!

Lacto-fermented Preserved Lemons

Lemons, scrubbed clean

I have become more and more adventurous in my cooking the past few years,
trying new things,
experimenting with different cuisines.....
And doing a LOT of fermenting.

Since I will be teaching a class at our CSA farm this summer on different types of food preservation, I have really tried to expand my basic knowledge into something I can actually translate into a class!
Preserved lemons have been on my "bucket list" for about a year, and I finally took the plunge this week.

Sea salt

Cutting the stem end off

Cut an X most of the way thru the lemon

Pack the cuts with 2 TBL. sea salt

EACH lemon should have 2 TBL of sea salt

Place in appropriate sized jar for the amt. you are preserving.
Add an extra couple TBL sea salt and the juice of several lemons to the jar.
If the lemons are not completely covered, cover with un-treated water.
I always use my well water for all my fermenting...
Cover the jar with a lid.

Let set on the counter for 30 days, after which you will have preserved lemons!
Refrigerate after the 30 days.
From what I understand, the flavor will be intensely lemony (duh) and salty. (another duh)
You mainly use the lemon skin, not the innards, tho I have read recipes where they put the innards inside a chicken before baking.

Preserved lemons have many uses...
dressings, tabouleh, couscous, Moroccan dishes, chicken....
It's making my mouth water!
I can't wait to try these...

Easy Peasy Homemade Ricotta

Ricotta

Having been blessed with some extra raw milk this week, I wanted to do something special with it.
But not all of it!
This recipe for ricotta takes only 1/2 gallon of milk.
You may use store bought milk, but do not use ultra-pasteurized....it won't work, and the high heat process that ulra pasteurized goes thru has pretty much killed anything beneficial anyways.

Homemade Ricotta Cheese

Ingredients

1/2 gal. whole milk
1 cup buttermilk (or yogurt)
Optional: 1/2 cup heavy cream
2 teaspoons white or apple cider vinegar
1 teaspoon salt

Method

1 In a large pot, bring the milk, buttermilk, heavy cream (if using), vinegar, and salt to a boil. Very gently boil for one to two minutes,(gently scraping the bottom of the pan to loosen any curds that may be stuck) until the milk is curdled.

2 Line a strainer with a few layers of cheesecloth and set it over a deep bowl or pan.

I let the mixture sit in the pan an additional 15 minutes for more curdling action!

3 Pour the milk mixture into the strainer and let drain for 15 minutes. Gather the cheesecloth around the curds and squeeze gently to extract any excess liquid.

Use immediately, or store for 3-5 days.
Makes 2 cups.

This was SO good, and very simple to throw together.
Pasta, italian sausage, ricotta, parmigiano reggiano, and basil leaves.
I did NOT have fresh basil leaves, as it is only May 1...
So I used about 3-4 TBL of my basil pesto from my stash I have in the freezer from last summer.

Perfecto!

EASY-PEASY LAUNDRY SOAP

The Players

"Makin' do, or doin' without" has been my motto here for the past few years.
So, when I ran out of laundry soap a while back, I had to figure out how to make my own, or do without!
Tho I posted about this subject a few years ago, I figured it was time to blog about it again since many of you didn't know me then.
I have no idea where in my blogging archives the original post is...
and since I needed laundry soap...
Here we go again....!

This recipe couldn't be any easier....

1 bar soap (I have used Zote and Fels Naptha)
1 1/2 cups 20 Mule Team Borax
1 1/2 cups Washing Soda (NOT baking soda)
3 gal. water

Using a box grater, grate the bar of soap
Bring 1 gal. of water to a simmer, and add the grated soap.
Stir until soap has dissolved and water is near boiling.
Add the Borax and Washing Soda.
Stir occasionally on med. heat for 10 minutes.
Pour into a bucket that will easily hold 3 gal. (I have a 5 gal. bucket)
Add 2 gallons of HOT tap water.
Stir occasionally till cooled.
Mixture will thicken as it cools.
Use anywhere from 1/4 to 1/2 cup per large load of laundry.

The end product

The Zote makes a pretty soft pink soap!

This works out to be less than .80 cents a gallon!
The only way you can get laundry soap any cheaper is if someone gives you a bottle!

Now...I am off to line dry that load of towels I just washed!

Greek Quinoa Salad

With only 3 chicken thighs leftover from the night before I knew I would have to have a substantial side dish to complete the meal.
Earlier in the day I had come across THIS recipe over at one of my favorite cooking blogs...
"For the Love of Cooking".
I have tried many of Pam's recipes and have not had one fail me yet!
I had all of the ingredients, including the itty bitty bit of parsley called for, cause I had just spotted some in the garden the day before!

For those who do not know what quinoa is:

A highly nutritious gluten free seed, originally from South America. It's mild, slightly nutty flavor makes it a terrific substitute for rice or couscous.
An exceptional source of protein, it contains all 8 amino acids, making it an excellent option for those looking to reduce their meat consumption.

For me, it was the perfect side to those thighs!
It will surely be one I make again over the summer when cold salads really shine.
Real food. Real good.

And now I am going to rest my weary bones after working in the gardens for a few hours today.
(And I was happy to do it!)

Now...

Can somebody please tell me to stop hoiking up stuff that would be/should be flowers?
You know in the spring, nearly EVERYTHING looks like a weed...
And before I know it, I've hoiked up yet another one.
It's like when you are running the vacuum,
and you SEE the dang bobby pin, but you suck it up regardless.

I am more than ready to fly my flag.
Sadly, the wind takes it down on a regular basis.
I pick her up out of the holly bush directly below it,

Oregano

If one is not very careful, oregano will take over the herb garden.
It gets HUGE!

Re-seeded parsley!

In our neck of the woods, parsley is an annual.
This year I have one that has come back to me from the grave!

Dandelion

I'm so starved for color, I am even happy to see this little guy!

Sage

I love sage.
Even in the deepest cold of January, I can go out to the herb garden, brush away the snow, and pick some sage.
Sage and Thyme.
Both winter over beautifully.

I suppose I could fix his eye up a bit with some paint,
but then he would lose some of his charm.
Right?

I usually plant thyme in this pot, but maybe this year I am ready for a change?

After my garden walk, this I know.
There is much to be done out there.
Now...if only the rain would stop long enough to dry everything out...
then I could slip those gloves on and git to work!

Meanwhile, since I have to be indoors anyway, I have been working on the CSA schedule for demos and classes.
Experimenting with some sourdough baking.
Counting my many blessings.
And seeking the Lord while He may still be found...

It was so nice to have her here for Easter dinner with us!

Curried Lentil Soup...

Curried Lentil Soup

I found this recipe over at Nourished Kitchen blog, and knew right away it would be a perfect spring soup. Not heavy like the soups of winter...chili, beef stew, etc., but soup that would put a bounce in your step, a twinkle in your eyes!

I followed the directions almost exactly, except I had no fenugreek seeds.
As a matter of fact I don't think I have ever had fenugreek seeds in my pantry!
Never mind the fenugreek seeds....I don't even think I know anyone who has them that I could have borrowed from....
And....
Don't be afraid of the curry in this soup. It is not overpowering like some curries...just a nice, mildly spicy soup...perfect for the kind of weather we SHOULD be having!
We all loved it!

Speaking of the weather...
I think we skipped summer altogether and went right back into winter....
10 days ago it was 85 and I was sunning on the back deck.
One week later it was in the 20's and snowing like January!

Spring...come back to us.
We hardly knew ya....

5 Ingredient Homemade Cheez-Its...

Homemade Cheez-Its

I found a recipe for these recently and have been itching to try them.
People.....read your labels!
Do you even know what is in a box of these things?

Enriched flour, (Niacin, Reduced Iron, Thiamin Mononitrate [Vitamin B1]Riboflavin [Vitamin B2]Folic Acid)Vegetable Oil (Canola, Cottonseed, Palm, Sunflower and/or Partially Hydrogenated Soybean Oil with TBHQ For Freshness)Skim Milk, Cheese [Skim Milk, Whey Protein, Cheese Cultures, Salt, Enzymes, Annatto Extract for Color]Two Percent or less of Milk, Salt, Paprika, Yeast, Paprika Oleoresin for Color, Cheese Cultures, Soy Lecithin)

MY list of ingredients:
whole wheat flour, butter, cheese, salt, cayenne pepper

I'm tellin' you...crackers are easy-peasy!
Anyone could make these!

Homemade Cheez-Its

1 cup whole wheat flour (I used whole wheat pastry flour)
4 TBL cold butter, cut in small pieces
8 oz. shredded sharp cheddar cheese (I used sharp white cheddar...they still come out a lovely color)
1 teas. salt
1/4 to 1/2 teas cayenne pepper (I used 1/2 for a nice spicy bite)
5-6 TBL icy water

Preheat oven to 375F.
Combine all ingredients in a a food processor, pulsing till crumbly. Slowly add the water, 1 TBL at a time, pulsing after each addition. When dough comes together, STOP.
Remove dough from processor and form into a disk. Cover with plastic wrap and refrigerate for about 1 hour.
I rolled my dough between my 2 silpat mats. You could use parchment paper, but I have not had very good luck with baking crackers on parchment.
Roll out evenly to fit a 13X18 baking sheet. Score with a pizza cutter or sharp knife (carefully if you are using a silpat!) into small squares.
At this point you may sprinkle with kosher salt. I did not, as I thought the cheese was salty enough.
Bake for 25 min. or until crackers are evenly brown. I check mine every few minutes, removing the outer ones as they brown quickly.

Now, the bad news.
These are SO dang good, you will not want to stop eating them.

Walked around the yard today, checking out the damage from the harsh winter.
Birdhouse in dire need of a hammer was the first casualty.

"Welcome" needs a little TLC
Nothing a little bitty twig can't fix

The curlies don't need any repairs, but the view beyond will definitely need weeding!

Bolt to the henhouse needs some reinforcing...

Picket on the picket gate needs a nail or two...
No paint tho...I like it like this!

Mailbox COULD use a coat of paint, but since I only use it to hold some extra garden gloves and a tool or two, I think we'll leave well enough alone.

Weeds that need to be pulled...eventually.
For now they add "character" to the sparce open garden spaces

For now things pretty much have to stay as they are.
Warmer days are coming...

My ipod is several years old, but since I am the only one who uses it, I figure it will last me a very long time.
I don't have music loaded on it, per se, but lots and lots of teachings downloaded from sermonindex.com or sermonaudio.com.

At the spin of a dial I can listen to David Wilkerson, Paul Washer, Zac Poonen, Paris Reidhead, Leonard Ravenhill, or a myriad of others.

When I am doing repetitious kitchen chores, like slicing carrots, or even doing dishes, I can glean from these incredible men of God.

In my neck of the woods, the birds are chirping, the greens are poking their way up out of the cold soil, the sun has been shining, and there is a song in my heart.

Jesus is coming. People get ready.
Soon and very soon, we are going to see the King!!!

First line-dried of the year!

A beautiful sunny day yesterday (high around 46), so we took advantage of the fact that there was no longer any snow beneath the clothesline, and hung our bedding out to dry.

Budding lilacs amongst the Redbud bush.

My favorite garden fragrance is lilacs...
Does my heart good to see them with buds!

Parsley re-seeded in the herb garden

Occasionally I get some herbs that re-seed when they are only supposed to be an annual.
Parsley is one of them.
A bit of green in all that gray is a sight for sore eyes, don'cha think?

Found!

Once the snow melts away, we see all sorts of things left behind in the fall.
I think there is a basketball out there, somewhere.
And I am certain to find a small gardening hand tool here and there.

Homemade Graham Crackers

And tho this has nothing to do with the title of this blog post, I couldn't help but share this new recipe I just tried yesterday.

These crackers are SO good.
I had a couple small ones dunked in milk after supper last night.

I pretty much followed Wardeh's recipe exactly, but her instructions on the amts. of honey and molasses are kind of sketchy...
What she means is 1/3 cup EACH of molasses and honey.
The dough seemed a bit dry, so I dampened my hands and pulled it all together.
I also did not roll them out on the underside of a baking sheet.
I rolled mine on my Silpat, then placed the silpat in the baking sheet.
Worked just fine.

The crackers took longer to bake then what she recommends, so I kept pulling out the ones that were lightly browned along the outside edges, then popping the rest back in the oven.
They were still a bit on the soft side when I finally took them out, but after resting on the cooling rack, they crisped right up.

Easy peasy!
Anyone could do it!

Life....without cable

Our TV antenna

A couple of weeks ago we made the decision, based solely on finances, to cut out cable TV and our land line.
We have had some form of cable for as long as I can remember, so this is a bit of a shock to the system.
Tho we are not huge TV watchers, I DO like my national FOX NEWS and Food Network!
But we took the plunge and went cable free...saving us over $100 a month.
We actually had our phone company's "triple play", meaning we got cable, land line, and internet for one price.
Sam wants the internet so he is taking over that bill...which means WE still get internet!
We still wanted to be able to get in our local channels...if, for nothing else...the news.
So....
We had to buy one of those TV converter boxes, but we still needed an antenna.
We stopped at a local thrift store and picked up a small one for $1.00.

You can see it perched atop the file box,
which is resting on a picture of the Eifel Tower,
which is laying across the blue clothes basket,
which is stacked on the green clothes basket,
which is sitting on an old kitchen chair,
which is on the floor in our bedroom.
Whew!
You should see what we have to do to get our local channel 8!!!!
I'd show you a picture, but we'd likely get in trouble with the FCC!
Just sayin'...
I can STILL see national FOX NEWS via the internet, so I can get my fix of conservative news.
And BONUS!
We get some oddball channels with the antenna.
So we have seen episodes of "The Beverly Hillbillies", "All In The Family", "Ozzie and Harriet", "Lawrence Welk", and "Jack VanImpe"!
Meanwhile...I have been in the Word more, got a bit of crocheting done, and cleaned under the fridge.

It's all good!

Soap sliver

I've been making soap for almost 2 years now, and it just keeps getting better and better!
I love it because there are no nasty deodorants or unpronounceable ingredients.
My soaps are made with pure olive oil, canola oil, coconut oil, lye, and occasionally some fragrances and herbs.

Cuckoo for crackers!

Homemade Sourdough Crackers

Really...anyone can make these.
I have been messing around with sourdough starter for nearly a year now, and have come across some phenomenal recipes.
Plus, I have been adapting some artisan breads using sourdough starter in place of the yeast called for.
All winners, as far as I am concerned.

These crackers are one of the easiest I have ever done.

But I'll tell you right straight that there are only 4 ingredients to these...
sourdough starter, whole wheat flour, lard, and salt.
Then the sprinkles of your choice.

Sourdough crackers in the making...

One thing I find indispensable when making crackers is a Silpat baking thingy.
I got mine at Bed, Bath, and Beyond
(that name always brings back memories of Toy Story's famous line..."To infinity...and beyond!)
for $15 each with my $5 off coupon...which by the way...never expire in spite of the fact that there is an expiration date on said coupon)
That's a lot of money, I know.
But I use mine all.the.time.

If indeed, you do take the time to look up this recipe, I will say that I have always used the lard called for.
It makes for a tender, yet very crispy cracker.
These roll out super thin, and if there is a bit of bare spot, the dough is so forgiving that you just mend it a bit with your fingers.
And I brush the rolled out dough with plain water, not olive oil.
They don't need the extra fat, and water works just as well for the herby sprinkles to stick.
I use a variety of herb toppings.
This week I used herbs de provence mixed with a bit of kosher salt.
Yesterday I tried some parmesan cheese, basil, and kosher salt.
You could also just have them plain, with a bit of sea salt.
Your call.
Just make 'em.

P.S. Watch carefully, as they burn quickly. I always plan on staying in the kitchen while they bake, and usually have to remove the outer ones well before the rest are done.

Fermenting & Gardening On My Mind

Cookbooks and Gardening books are always on my night table

Because there is a lot of snow still on the ground and the skies are gray, I NEED something to bring a ray of hope.
Gardening books and cookbooks are just the ticket.
I have a plethora of them!!!
SO many ideas, so little time.

Organic Figs

I have made fermented apricot butter in the past and I love it!
When I saw the organic figs at Costco a couple of weeks ago, I knew I wanted to swap out the apricots for figs.

Fermented fig butter...YUM!

So I did!
All you need is a food processor, a bit of honey, some salt, and some whey.
I have all 4....so I jumped right in.
I like to use about 1 TBL or so of the fermented fruit spread in a kefir smoothie.
Gives it just a bit of sweetness, and mellows out the tangy flavor of the kefir.

Fermented fruit butter

4 cups unsulphured dried apricots or figs
1 TBL sea salt
1/4 cup liquid whey
1/4 to 1/2 cup raw, unfiltered honey (I use 1/4)

Cook fruit in filtered (I use my well water, straight from the tap) water to cover until fruit is soft. This typically takes about 15 min. Watch carefully and add more water if necessary. I always have to add more water.
Let cool and place all ingredients in food processor and process till fairly smooth.
Place in a 1 QT mason jar and close lid tightly.
Leave on the counter for 2 days then refrigerate.
I like to take about 1 cup of this and put it in a separate jar and keep it in the fridge. I freeze the remainder in a jar and refill my small jar when necessary.

We have been using up the ferments from this fall at a rather rapid rate.
I think the kimchi is my favorite, with sauerkraut with caraway a close second.
Also the escabeche (fermented jalapenos, carrots, peppers...) is wonderful alongside any type of Mexican food. Mmm...good on a sourdough style sandwich too.
I have been doing a bit of research this winter on other kinds of ferments and hope to have some new ones to share as summer comes upon us and the fresh ingredients are once again available.
Meanwhile, I am happy knowing the spare fridge still has a few gallons of sauerkraut, kimchi, etc.

Sourdough pizza crust with various toppings

I have been messing around with Jim Lahey's (of no-knead bread fame) new bread book, "My Bread". It doesn't have a lot of recipes, per se, but what it does have are recipes I have been using as a springboard to using more sourdough starter.
Cause I love the flavor of sourdough.
And cause I have a mah-vel-ous sourdough starter sitting on my counter that I have been taking very good care of for a long, long time.

If you have ever working with Lahey's no-knead recipe you will find it easy to change it up a bit, as you already know how wet the dough is supposed to be.
If you haven't, then I would at least try his basic recipe a couple of times so you get an idea of what it should look like.
You can google "New York Times no -knead bread" and you will easily find the recipe.
I have been making his bread for several years now, and it is always a big hit.
Even better now that I have been replacing the yeast with sourdough starter.
Just sayin'......

Sourdough starter

RECIPE: Makes two 13X18 pizzas

3 3/4 cups of bread flour
2 1/2 teas. salt
1 teas. sugar
1/2 cup sourdough starter
1- plus- cup of room temp. water...depends on what kind of day it is, really...I think I use about
1 1/4 cup of water

Mix all of the above (about 30 seconds) and let sit on the counter for about 2 hours, or until dough has more than doubled in volume. Dough will be fairly wet, but not runny.

Using a rubber spatula, remove the dough from the bowl and place onto a floured work surface. Lightly shape into a ball.
Let sit another 30 min., covered with a damp kitchen towel.

Meanwhile, oil (olive oil) two 13 X 18" rimmed pans.

Pre-heat oven to 500 degrees....yes, 500 degrees. Rack should be in the center.

Pick up 1/2 of the dough and plop it, floured side down, onto oiled pan. Gently stretch it to pretty much cover the entire pan. Don't worry about bringing the dough up the sides. Not necessary. If the dough sticks to your fingers, lightly oil them and continue.
Remember...this is a thin crust pizza!

Top with a small amt. of pizza sauce.
I use a recipe for homemade sauce I found at Food Network by Tyler Florence.
We love it and it's cheap and easy.
Too much will make the dough soggy and it will not crisp up well. Add toppings, but be careful not to overdo. Soggy pizza...not so good.

I used a jalapeno, finely diced, some thinly sliced onion, several tomatoes that I seeded and cut into small pieces, sliced green olives, and a bit of diced summer sausage.
Top with about 8-10 oz. of mozzarella cheese. Or cheese of your choice. Mmm...feta is good!

Bake for 15-25 minutes, watching carefully.
This is a thin, crispy crust, and it can easily go from lightly browned to crispy burned in a very short amount of time!

All of us have agreed that it is the BEST.PIZZA. EVER. to come out of my kitchen.
And I have been making pizzas for a very, very long time!

We were in the midst of making supper last night when we were totally and utterly distracted by this.
I must have taken 30 pictures from different parts of the west side of our house.
Took me over an hour to whittle them to down to 15.
Could hardly bear to delete even the imperfect ones.

"For the Lord Himself will descend from heaven with a shout, with the voice of an archangel, and with the trumpet of God. And the dead in Christ will rise first. Then we who are alive and remain shall be caught up together with them in the clouds to meet the Lord in the air. And thus we shall always be with the Lord.

Indian Dal

Main Ingredient

Easy Peasy

Tho many Indian recipes can be complicated, for the most part, dals are not.
And they don't have to be incredibly spicy...your choice.

Moong Dal over Basmati Rice

I found the recipe HERE,
tho I didn't follow it exactly.
I left out the diced tomatoes, and also the asafoetida.
The asofoetida is difficult to find around here, and I have heard not good things about it's flavor.
Tho it is called for in many Indian recipes, most say it is optional.
I also increased the jalapeno to one whole, diced, without seeds.
Still not hot, but I think jalapeno's are just not that hot this time of year.

I had a couple of Tandoori Chicken thighs leftover from last night's supper, so those will get diced up and put in Farmboy's bowl.
The rice was also leftover from last night's supper, so really, this was a VERY easy peasy supper!

The whole kit-n-kaboodle only took about an hour to cook, and it is pretty much low maintenance.

Our driveway.... two hours and $50 later...

Whew! Schools around here are closed for the 2nd day...not because of bad weather, but because the secondary roads have not all been cleared yet.
The neighbor kids are out in droves!

Ollie...sittin' pretty in the front window.

He wouldn't go outside yesterday for anything.
Oh...he thought about it!
He's stand by the door, scratch to get out, then as soon as we opened the door and he felt the wind, he'd high tail it back to safety!

A White Winter Soup recipe from Culinate.com

Perfect for the bone-chilling day we had yesterday!
A LOT like potato leek soup but with a whole head of cauliflower along with the potatoes and onions. I wasn't sure how that would all go together, but really, you could not even tell there was cauliflower in it.
Pureed till fairly smooth and creamy, it paired perfectly with some crusty sourdough no-knead bread.

It was delicious, and one that I will add to my long list of soup favorites.

Homemade Vegetable Bouillon

The soup recipe above references some vegetable bouillon, with the recipe also on Culinate.
This stuff is GREAT!
Mix up the veggies, kosher salt, and herbs in the food processor and put it in a jar and keep it in the freezer.
I think it calls for 1.5 teas. per cup of water.
Perfect for when I don't have homemade chicken stock in the freezer.
If you are salt sensitive, keep in mind that the recipe makes 1 quart of bouillon (all ground up) and 1 cup of that is kosher salt.
Feel free to cut back on the salt.
I think you could easily cut it in half.

Yeasty Saturday...

Bagels!

My 1st attempt at homemade bagels and they were delish!

100% whole wheat bread

Another simple recipe, kneaded entirely by my Kitchen Aid stand mixer.
It is the perfect sandwich style bread...not crusty but tender through and through.
One for the counter and one for the freezer.

Bowl of blemished lemons

Can't help it.
I must have a mess of lemons in the house.
Costco has them so much cheaper by the humongous bag, that even if I end up wasting a couple, I still got a great deal!

I have spent much of the day in the kitchen with the oven fired up.
A perfect bread baking day...cool temps outside with nothing but time on my hands.
We will end it with another yeasty wonder...homemade pizza.
I am trying a couple different versions tonight.
One is a simple pizza dough baked in my 10" cast iron skillet.
The other is a thin crust pizza with a small amount of toppings.
You have to be careful with those thin crust pizzas...
too much on the top and you end up with a soggy mess.
Still tasty, but not the crunch I am looking for!

Soup-er supper!

Rustic French Bread

The makings of a couple of lovely loaves of French bread, rising in my mixing bowl.
An even mix of whole wheat and white flour, it bakes up nice and crusty...
perfect accompaniment to a steaming hot bowl of soup.

Butternut squash and kale minestrone

I found this recipe yesterday while perusing my friend Wendy's blog, thelocalcook.com
Someone had commented about Wendy's favorite root vegetable recipes and linked up to her own favorite.

I had the squash on the counter, kale frozen in bags from this summers bounty, homemade chicken stock, and cannellini beans I had frozen in ziplocs this fall after cooking up a 3# batch, and.... a mess of fresh/frozen tomatoes.

Easy-peasy!

I didn't add the pasta, which would have made it a true minestrone, but with the bread being served I just didn't think we needed another heavy carb.

Been missin' everyone like crazy and hope to be blog hoppin' this evening and over the next few days.

A little somethin', somethin' in the works...

Winter 2010

Just a quick drop-in to say "hey"!
I haven't much time at the computer but wanted to update with a few thoughts of what might be goin' on.

I have an urgent need to be getting some work....like work where you actually get paid!
Tossing some ideas around with friends, and have come up with a couple of possibilities.

Thinkin' about a 'personal chef, menu planner, pantry organizer, REAL food shopper, etc',
kind of a job.
At our CSA farm there are new folks joining every season and many of them have absolutely no idea how to prepare some of the more unusual veggies.
I could offer my services as a "one time only" thing, or a series of perhaps 4 sessions.
Or...someone who comes in once a week to shop, prep, and cook a meal.
OR...something along the line of a Tupperware party, but instead of selling products, I sell "how-to's"...
For example...how to make a pot of chicken noodle soup from scratch.
OR....
How to create a healthy pantry...

Anyways....just a few thoughts racing around this ol' gal's head.

Ooh...how about preparing healthy, good-for-you meals for those that are house-bound by illness or are recovering from surgery?

I even have a few ideas for a business name!
How's about...

"The Hungry Family"
or...
"Just Cook It!"
or...
"Eat Right-At Home!"
or...
"Sound Meals"
or...
"House Call Suppers"

I could market myself as someone who could come into your home and analyze how you WANT to eat, as opposed to HOW you are currently eating.
Some folks just need a little nudge to send them in the right direction.
I have 40 years of homemaking experience under my belt, with the last 8 or so focusing on healthy, organic, etc.

What do you all think?

As a plus, I have been told by our CSA farm owners that I could be somehow connected to the farm as an independent contractor, using the farm and the experience I have there as a teacher/assistant as a reference point.

I'm excited, but nervous.

Any ideas from you all would be greatly appreciated!

Grandchildren Austin and Trena

We have really been enjoying having the kids here these past few days!
Trena is everywhere, all at once, and it has been a joy to sit down and play blocks, ponies, dollies, and read books!
And more books.
And even more books.
She is just like her mama who is just like HER mama!

My dear friend and "daughter" Anna stopped by clear from Texas this week!
We got to sit and visit for nearly 2 hours.
Tho we talk on the phone on occasion, and we FB back and forth, I haven't actually seen her face-to-face in a few years.
It was wonderful.
Love you, Anna!

As for me, from here on in, I will be taking a much needed blogging break.
There is a lot going on here that I am not able to share at this time.
Blogging is just one of the things that has to fall by the wayside for a season.

Mittens!

Trena's Mittens

Created from a wool sweater from the Goodwill and felted right here at the farmette.

The likelihood of these cutie patooties even fitting her are pretty slim, as all we could go by was a tape measure and a wiggly toddler!
But if not this year, then surely next.
Regardless...it was a fun project.
Instead of sewing them right sides together, I chose to do a blanket stitch all around
That way there is no bulky seam on the inside....which may or may not bother a 2 year old, but I know it would bother me!

A sweet snowman star....

Once again this year I have kept decorations to a minimum, with the mantle, the tree, and the nativity taking center stage. A very few other little bits and bobs are lying about, but nothing overwhelming. The left knee has really been acting up and with no more insurance, this is one I will have to just live with. So I chose, once again, to keep things simple.
I will be ever so grateful when it comes time to put everything away!

This will likely be it for blogging for at least a few days.
Our daughter and her family fly in this Monday and will be staying here with us till Sunday.
There will be lots of photos taken, but more importantly, lots of precious memories being made.
We are counting the days....

Last year I crocheted some funny little trees to go 'round the nativity.
My friend Jen thought the camel needed one on his head.
I think we will keep it there.

Baby Skates

One of my favorite Christmas ornaments.
Brings back memories of when we were kids and the local town would flood the back of the baseball field for the neighbor kids to skate on.
Valley Field.
My little sis and I would walk there, make no small effort to keep on our feet with wobbly skates on, and flirt with the boys.
We wore those long stocking caps back then, and it was surely a sign that someone "liked" you if they came whizzing by and stole your hat.
The innocence of youth.

I got an early Christmas present this year when my kids all pitched in and bought me a Canon Rebel XS that my dear friend Jen was selling.
They graciously allowed me to get it last week so I could play around and get used to it before Christmas.
It came with Photoshop Elements 7, which is why there are some textures and text added here and there.
It has been ever so much fun!

A little bit of Christmas at the farm...

The real reason for the season...Jesus

I have been busy, busy here at the farmette. Sewing, knitting, baking, soapmaking....
And not a whole lot of time for blogging!

Beau and Avery, out at the Christmas tree farm

We were out yesterday at the farm we have gotten our trees from the last 8 years.
This year we got the Griswold's tree.
SO huge...
We got it home....barely....
Set it in the stand...
And Farmboy had to cut about 10 branches off the bottom.
We truly could not get around the tree without running into furniture!
Even trimmed, it is too big!
But it is a beauty!

Farmboy and I have been watching some Christmas movies here at the farmette!
Christmas in Connecticut, Christmas Vacation, The House Without a Christmas Tree, Charlie Brown's Christmas....
It's been so nice to just sit and relax and watch the classics!

The tale of two aprons

After cutting out the blue striped apron and putting the whole thing together
(VERY easy-peasy)
I wasn't sure if I liked how it hung just straight down with nothing around the hips.
This morning I changed the pattern a little ,
(all right already, Pete changed it)
and came up with one that will cover more of her sides and back.
I LOVE IT!
Now I want to make a larger version for adults.
Maybe even matchy-matchy!

No Knead Sourdough rye/wheat/white

Michelle told me about "Breadtopia", a web site dedicated to all things bready.
She had been making some of their sourdoughs and was lovin' how they were turning out.
After checking it out for myself, I have been going sourdough crazy!
Once you have your starter going, the rest is....
you guessed it....
easy-peasy!
I got the swirly design by using a Brotform bread bowl for it's 2nd rise.
Isn't it pretty?
And delish, too!

Meatloaf

It was such a cold, snowy day I thought a meatloaf would be a cozy, comfort kind of supper.
With sides of baked potatoes, crusty sourdough, sauerkraut, and pickled beets, it hit the spot.

Makin' it over, wearin' it out...

Felted pink sweater

Makin' do, or doin' without....

This will be another one of our "handmade/homemade" Christmas's, and I have a few ideas up my sleeve!
I am taking this felted sweater and cutting out some mittens and possibly a hat from the hoodie part for our granddaughter, Trena.
I even found a way to make the wool waterproof by using some lanolin, but not sure if she will need that.
She's not quite 2, and for now, all she needs is something to keep her patties warm from the house to the car!

Free toddler apron pattern with beautiful Ralph Lauren sheets from Goodwill.

I spend a few minutes googling free apron patterns and came up with what I pray will be the simplest one out there!
Trena is just now getting to the age where she likes to be a mama's helper, and a sweet, full-coverage apron will help keep her clean and dry!
I cut the pattern out of old newspaper and will begin the sewing later this afternoon.

Pray for me.

Anyone who was reading my blog back about 1 year ago, might remember the apron fiasco.
Okay...I have a very difficult time reading/understanding your typical patterns and have accused the pattern companies
(Simplicity? I think not...)
of being outright liars when they state that a certain pattern is "Easy-Peasy".
Am I alone out there?
I need someone to S.P.E.L.L. it out for me, then actually S.H.O.W. me how to do it.

I'll be back when I get the projects finished.

And no, he does not feel the need to dress up or shave for Thanksgiving.
(Sam was "blessed" with my naturally curly hair)

He didn't have any....he's funny that way.

At dinner he had turkey and 2 rolls. (with honey)
That's it...

We had an awesome time of food and family yesterday.
I have been cooking Thanksgiving dinners for more years than I care to admit, and this, by FAR, was the best turkey I have ever pulled out of the oven.
I followed Alton Brown's (of Food Network fame) brining/baking instructions, and let me tell you, there is no turning back.
It was the moistest turkey EVER.
The breast was juicy and tender, and the skin crispy and browned.
Tried a couple other new recipes, too.
An awesome sweet potato/apple casserole and a delicious creamed spinach. (light on the cream, heavy on the spinach/parmesan)

Today I am going to rest.
And read.
And rest some more.
And eat leftovers.

Giving thanks with a grateful heart...

Austin, my helper

Busy, busy here in the farmette kitchen preparing for the family tomorrow.
Austin didn't have school today so he came over and "helped" me with dessert and shaping the rolls.
I love that boy!

I try to prep as much as possible the day before so Thanksgiving doesn't find me running willy nilly all over the place.
Truth be told, I think the floor will get mopped in the morning, and most definitely the toilets will get a good scrubbing.
I can't do it all!
At least not in one day....

In spite of the year we have had, it is STILL
(and always will be)
a good thing to give thanks unto the Lord.

As we gather together tomorrow with family, friends, and loved ones, let us always remember the One to whom we owe ALL things.

His grace is always sufficient for me...

Sourdough Coconut Chocolate Cake!

Cake!

Remember the "Snackin' Cakes" from Betty Crocker back in the 70's?
Well, I do!

This is similar in texture, but that's about where the similarity ends.

This cake is not very sweet, which is perfect for me.

You could frost it with a chocolate ganache, but I prefer some real whipped cream.

SOURDOUGH IN THE KITCHEN...

Sourdough starter mixed with water and flour the night before...

Many, many years ago I attempted to make a sourdough starter.
Back then there were just a couple of cookbooks I got my ideas from, and let's just say my experimenting didn't bode well.
Can you say "lead bread"?

After a slow rise overnight in the dehydrator, and a firm kneading in the heavy duty mixer, the gluten is formed. See how stretchy the dough is? That tells you the gluten is there!

This summer I signed up for the free/pay what you can Sourdough e-course offered at GNOWFGLINS.
(You can sign up...it's easy-peasy!)
And after keeping my starter healthy and flourishing for weeks and weeks, I let it die.

R.I.P. sourdough starter.

About 3 weeks ago, to keep my mind off of all the things going on here, I began again.

2nd rise...It's a beautiful thing

I've had lots of success with sourdough pancakes, and sourdough english muffins, but it was time to bring out the big guns and try some bread.

Sweet victory!

Ooh, it felt so good to bring those loaves out of the oven, smelling their slight soury smells.
Even better was the tasting.
Not too sour, not too heavy.
Just right.
Bread...the staff of life.

PICKLED BEETS...

Lacto-Fermented Beets

Two weeks ago, at our last (sob) CSA pick-up I was fortunate enough to take home a bag of organic beets.
Now beets on their own are just OK.
But pickled beets are a horse of a different color!
I usually only buy them around the holidays as they are fairly pricey at the grocers,
but this year (my fermentation year!) I wanted to try my hand at making my own.

So...I scrubbed off my beets and roasted them in a low oven (around 300F) for 3 hours.
I then let them cool enough to peel them.
They were way too difficult to peel like this, but I did what I could.
I then went out to what remains of the garden and dug up another batch of beets.
This time I scrubbed them, then boiled them for about 1 hour (low boil) till tender.
MUCH easier to peel!
The peels just slide right off....
Following the recipe in Nourishing Traditions, I washed 8 wide mouth pint jars and put the seeds from a cardamom pod in each one.
I cut the beets into thick julienned slices and put them in the jar, pressing down firmly.
I then mixed 1 cup of water, 1 TBL sea salt, and 4 TBL of raw whey and covered the beets.
Each pint needed approximately the full 1 cup of water/salt/whey mixture.
Now they will set on the counter for 3 days then go into the already too full basement fridge to slow down the fermentation process.
By Thanksgiving they should be nice and pickled!
YIKES!
Thanksgiving is just 2 weeks from today!
How the heck did THAT happen?
And could somebody please tell me where September and October took off to this year?
Cause I don't much remember them....

EASY-PEASY BOURSIN CHEESE

Homemade, easy-peasy Boursin Cheese

I cam across THIS recipe for homemade Boursin cheese, and wanted to give it a try before the holiday get-togethers started.
A trial run, if you will!
So....Last Sunday when we had most of the kids over was my test.

Oh. My. Word.
So delicious!
So easy.

The ONLY changes I made to the original recipe was to cut the butter down.
I actually doubled the recipe for our family, so the doubled recipe called for 2 sticks of butter and I used 1 1/2.

I happened to have some homemade fromage blanc cheese I had made from some of our extra raw milk the week before, so this made it uber-tasty!
The original calls for cream cheese, which is available to anyone, so there is NO excuse!

I also used 2 HUGE cloves of garlic, which gave it QUITE the garlic bite.
Fine for me, but you might want to re-think the huge thing, and just go for regular sized garlic.
This would be a perfect veggie dip, as well as a sandwich spread, or a dip for crackers.

It is well with my soul.....

From the bottom of our hearts we want to thank each and every one of you who has been lifting us up in prayer.
I cannot even imagine how others go thru trials in life without knowing Him.

I am trying to go about my "normal" wifey duties....cleaning, cooking, cleaning some more....

And, if no one minds, I will get back to my usual blogging tomorrow.

I have some awesome things to share with you...new recipes, book reviews, etc...

On Sunday we will be having a memorial service for our grandson, Alex.
Mixed feelings there....
We want to celebrate the short time he was here with us, but we know it will be difficult.
How much easier this all is to bear, knowing that one day we will see his little face in heaven.

"For now we see in a mirror, dimly, but then face to face. Now I know in part, but then I shall know just as I am known." 1 Corinthians 13:12

Alex is home now....

Alex went home to heaven this morning around 11:30.
Krystal had fed him and lay down with him for a morning nap and when she woke up an hour later, he was gone.

Pete and I are SO thankful for the few weeks we had with Alex.

Poolside for a family gathering, Alex is center stage!

In his Pepere's arms....

This past Friday Pete and I babysat while Krystal went out with Warren and their other sons.
He just stared and stared at Pete, at times almost laughing while his pepere made faces at him!

Our hearts are heavy with grief, tho we know Alex is in a much better place.
Please remember us in prayer over the next few days....

This is the hardest thing we have ever been thru....and we've been thru a lot.

His grace is made perfect in our weakness.

Pepere, Alex, and Memere

We had nearly all the kids here today for Sunday supper.
Alex was awake for a long time, looking and smiling at us.
Tho he can't cry anymore, he can still make tiny sounds, and he was cooing and nearly laughing as Pete was playing with his tootsies.

We are cherishing each and every precious minute with our little grandson.
We both put up a good front while everyone is here, but later...
we are both wiping tears.

It's hard.

Healthy Condensed Cream of Chicken/Enchiladas

The humble beginnings of cream of chicken soup...homemade stock, milk, and seasonings

I have found several recipes for making your own condensed cream of...but THIS one over at Tammy's Recipe Blog sounded the most promising.

I wanted to make some Chicken Enchiladas since I had all the meat left from my rooster after simmering him for stock a couple of days ago. And I had 9 homemade whole wheat tortilla shells left from our beef/bean burritos yesterday. A couple more key ingredients and I was ready to create!

Cream of chicken soup

No worries if there are some little lumpies in your soup...just strain them out as I did!

1 medium onion cooked in 2 TBL butter till soft

Add the onion to your soup mixture

Add about 3 cups diced/shredded chicken, 1-2 cups shredded cheddar cheese, and 2 cups sour cream to the soup /onion mixture

Homemade tortillas

Shmear a thin layer of your meat/soup/cheese mixture in the bottom of a 9X13
Then fit in a layer of tortilla shells...I tear them up to make them fit
Then a layer of your soup mixture.
Another layer of your tortilla shells
Then the final layer of your soup mixture
Sprinkle top with the shredded cheddar of your choice.
Typically we buy the white cheddarTillamook from Costco, but that just does NOT look very appealing on an already beigey dish!

Oven ready Chicken Enchiladas!

Bake at about 350F till hot and bubbly and the cheese is all melted, maybe 40 minutes.

So delicious on this chilly autumn day!

I would encourage you to try making your own condensed soups.
A real money saver, and for heaven's sake...no MSG, no weird chemically tasting stuff...just your own ingredients straight from your freezer and spice cabinet!
