
Typically, I am a "fat-free plain yogurt, mixed with a fresh, cut up orange, with a small handful of Kashi Go-Lean Crunch thrown in for good measure" kind of gal! HOWEVER, last weekend, while visiting savvycityfarmer.blogspot.com she told me about a new South Beach recipe she has been using. I modified it a bit, and came up with my own version, using MorningStar "sausage" patties instead of regular sausage. You just crumble up a whole package (6 patties) of the "sausage", and stir fry it with half an onion, maybe 6oz or so of fresh mushrooms, and a bit of olive oil to keep it from sticking. When veggies are tender, divide into 12 muffin cups, pre-sprayed with a bit of PAM. Let cool slightly. Meanwhile, beat 9-12 eggs, and pour over the tops of the "meat" mix. Top the raw egg with a sprinkle of grated, lowfat, cheddar cheese. (I get a big block of Cabot 50% less fat, from Cotsco.) Bake at 350 for about 15 minutes. Tops will look slightly jiggly when done, as the cheese still has to set up when it cools. YUMMY!

Lest we forget the feta, and the six cheese blend from Trader Joe's.
I do believe that combo is whar makes it so good. In fact yummy!!!
