HEAVY ON THE GREENS

I am just itchin' for a bit of spring, especially since we had over 6" of snow dumped on us last night!
So for brunch today (brunch, because I typically eat around 11am, and sometimes eggs or cereal just doesn't sound all that good that late in the morning) I made a green sauce to go over the baked salmon I knew my body was craving.(or I should say my "waistline" was craving!!) This sauce is so springy tasting, with lots of parsley, lemon, and basil. I am, perhaps, a bit TOO liberal with the sauce, since I am not crazy about salmon, and the sauce makes it SO much more palatable!

Cyn's Green Sauce for Fish

1 bunch flat leaf parsley
1 bunch fresh basil
1 TBL fresh mint
4 cloves garlic, chopped
2 heaping TBL capers
4 anchovies
zest of 1 lemon
2 TBL fresh lemon juice
1/2 to 2/3 cup olive oil
pepper, to taste

Put all of the above in food processor, and process till coarsely chopped. Serve over fish.
Keeps in the fridge for several days, perhaps even a week or more.

It does look good but MAN I love salmon right out of the can or pouch. With crackers and mustard. And I have something to show you...may post it tomorrow if I can think of a topic to go with the photo.

ahhh yes it is 11:00 a.m. for me to eat too! I just can't eat a thing until around then, and this would be right up my alley I must write this one down....brrrrrrrr we will hit record cold this coming weekend...possibly as cold as -50 with the windchill ...thinking about my chicky babes in their coop...thanks for adding me and your super wonderful posts cyn!

we try to eat salmon every week and luckily for us we haven't had our salmon yet . .I'll stop at the market for the sauce ingredients and give it a try. Looks yummy.

I have to admit I am not a salmon fan...I tried..but it just makes me gag. You cook so healthy and beautiful Cyn...now I feel so guilty about my DONUT post today...home made donuts and fried too! I've just been thinking about them. Sigh.

I love the colour combination of salmon and green sauce. usually I do avocado pureed with a clove of garlic, a dash of tabasco and a dollop of creme fraiche, just enough to "loosen" the avocado and turn it intp a sauce. To serve cold with warm or cold salmon.
I'm going to print out yours because all those herbs must be healthy.
