RAINY...WITH A CHANCE OF MEATBALLS!


This is a photo of our pond this morning.
In the 7 years since we've lived here, we have never seen it so high.
The dock is nearly totally under water, and the tree directly behind it is usually on the shore.
It started raining Saturday morning and rained hard for most of the day.
Sunday we had more rain.
And there is more on it's way for this afternoon.

So what do you do when you are itching to be outside working in the gardens, but instead are stuck in the house?
Meatball sandwiches, that's what!
I made homemade meatballs, then baked them on a sheet of foil in the oven till done.
No greasy stove to clean up!
Put meatballs in a pot with a jar of whatever spaghetti sauce you have on hand.
I think mine was Prego.
I added a bit of minced garlic to the sauce, and simmered for about an hour on low.
Just enough to thicken the sauce and tenderize the meatballs.
Split open a chunk of Italian or French bread.
I tore out a bunch of the bread...who needs all those carbs...
and put 4 meatballs with sauce on each chunk.
Sprinkle with a bit of mozzarella cheese, and wrap in foil.
Bake for just 5-10 minutes, or till cheese is melted.

Now THAT'S amore!

You just can't beat meatball sandwiches - yours looks tasty.

We are still getting a lot of rain in Oregon too.

That's what I can do! I spent Thursday working outside and it's rained every day since here as well...

Sounds yummy! I love meatball sandwiches and I bake our meatballs too! :) I do the gravy like you were talking about on my blog when I make shredded beef enchildadas! Yum!! Hope you have a great week.

If possible Florida would take most of your rain. The water level is very low and our summer rains haven't started yet.

We have been getting quite a bit of rain here lately as well. But, since we are recovering from a sever drought, we welcome every drop.

Funny you mention that because I had the same issue yesterday. Wanted to go out and plant some more stuff in the garden but to much rain. Instead I did meatballs too but mine were with a chili tomato sauce that I gave a little to much love to Mr. Chipotle.

Your dock reminds me of my buddy's dock right now. We can't fix it because the water is higher than the freaking waders.
