Beans & Beer!

Tortilla Black Bean Pie

I DO try to plan a weekly menu, and I also try to incorporate at least one new dish that we have never had before.
Cause I like surprises.
And with the internet and blogging, I am never at a loss for fresh ideas.

This recipe came from a blog called 2 Equal Parts.

It was absolutely delicious.
And pretty darn easy-peasy!

And it came together in about 20 min. of prep time and 20 min. of baking.
It calls for simmering 2 cans of black beans in 12 oz. of beer, which, if you know about cooking with alcohol, the alcohol content is gone after just a few min. of simmering.
BUT...the flavor it imparts is wonderful!
I DID increase the garlic and cumin,
(cause I'm THAT kinda girl)
and I also topped each individual serving with thinly sliced scallions and chopped cilantro.
The cilantro is not in the original recipe, but I think it adds a great amount of flavor.
I would also add more jalapeno, but that is because the ones at the grocers right now are very mild, and I think it could have used a bit more heat.

Also, not in the original recipe, but I baked it in a round tart pan, and it needs to have a spray of Pam before laying down the 1st tortilla.

I served mine with tortilla chips, some lite sour cream and homemade salsa.
Would have had guacamole, but the avocados at the grocers were rock hard.
Next time I will plan a bit better!

this sounds great! increasing garlic goes without saying, IMO...haha. all of your additions are probably the same thing I would've done.

When I'm a good girl and being all "organized" I do plan my weekly menu before I go shopping and post it on the fridge. Otherwise it's in my head....but that sometimes goes out the window and I find myself flying by the seat of my pants (read Pizza Night! LOL)

Funny you should ask this! I have been flying by the seat of my pants for awhile now...and I HATE to do things that way! I am so much better with a schedule. Only this week a blogger friend I have been keeping track of has posted some "self help" tools for meal planning. I LOVE her ideas and am in the midst of implementing them.

That looks wonderful. I'am a fly by the seat of your pants kinda gal. See My dad and mother-in-law live with us so sometimes they like to fix things. Believe me my dad does not tell me ahead of time about oh 2:00 he will tell me if he wants to fix something. The good thing is we never go hungry we always have something to eat. Looks a bit like a salad I throw together a lot. 1 can of drained sweet corn, 1 can of drained black beans, sliced olives, salsa to taste, and some onion if you desire.

That looked so good that I had to try it with a few variations. I had all the ingredients on hand but I wanted to do it in the crockpot. I greased it well and decided to prepare only half a recipe in case no one would eat then I'd be stuck eating it for a week! Well, it was so GOOD and I could easily have done a full recipe. It was especially good with a dollop of sour cream and salsa. Thank you.
