Prego....it's what's for supper tonite
If mama never told you there'd be days like this, mama was a tad negligent!
I've had 3 very busy days in a row, and this mama is too pooped to do anything but pop the lid on that sweet jar of spaghetti sauce, add 1/2 cup of red wine and a couple of links of chorizo sausage all chopped up, heat, and serve with some pasta.
As much as I am an advocate of made from scratch meals, there are times when I simply cannot bear the thought of another 15 minutes on my feet.
That is when Prego or Kraft somethin' or other comes to the rescue and I simply sit back and relax.
I don't do it often, but I am ever so glad for the back-up.
What are YOUR "go to" easy-peasy meals?
PS....I draw the line at corn dogs....YUCK!

My easy-peasy meals are out of my freezer. When I make a pot of soup or spagetti, I freeze at least one quart, or more. Then, when I'm bone tired and 'what's for dinner?' comes to mind, I pull out a quart and heat it up. Soup gets cornbread fresh from the oven and makes 2 nice sized bowls for the two of us. Spagetti gets noodles boiled and something steamed for a veggie.
Sometimes you do what you gotta do! And I just did, threw a variety of vegetables, beans, spices, and noodles into a crockpot for some hot soup. It tastes different everytime!

Our eazy peezy meal is fried rice. I make a big pot of brown rice, rinse it in cool water and drain well. You now can freeze this into serving sizes. Whenever we have leftover steak or fried chicken, I cut the meat into bite sized pieces and freeze, same goes for leftover veggies. Now simply thaw your ingredience, add oil to a pan and get hot, fry up 3-4 scrambled eggs, add meat, veggies, rice and soy sauce and "Vah La" you have a hot, filling, nutritious meal!*wink*
Scrambled eggs & toast. Or if it's been a REALLY long or stressful day? Thai food takeout or Little Caesar's.
A couple weeks ago, I was working all day for 3 days on a project and my poor kids had to eat $5 pizza. I took a piture to blog about it, then was too embarassed. LOL
I have nights like these too...tonight was actually one of those nights....I just felt drained. It's really cold and rainy here...so we ordered some pizzas. I would much rather cook too, but I love when there's somethings easy to get when I just wanna eat and go to bed:) Spaghetti is another easy meal we love to have when we want something quick and easy.

Prego is my favorite kind of spaghetti sauce if it's not homemade. And I really like rice-a-roni. Don't forget those Knorr seasoning packets...those are pretty darn good too.
Yup...that was me tonight! We had spaghetti sauce from a jar with scramble fried meat and pasta. Easy as anything!
BUT...I have a few other "easy peasy" dinner ideas. One is scrambled eggs with toast and a steamed veggie or two on the side.
Another is...frozen pizza from the freezer...rare...but gets the job done!
And yet one more...fish fillets baked with rice and a steamed veggie or two.
Seems this homeschooling Mum of four has a few stashed away in her back pocket! :)

My emergency "company is coming in the door right behind us" meal is:
Open bag of frozen Tyson boneless, skinless tenderloins... rinse & put in large pot to saute.
After about 10 minutes add two - three jars of spaghetti sauce (depending on how big jars & how much pasta you're making)
Start water for pasta & make salad.
Your dinner will be done in about 15 more minutes!
Fresh grated Parmesan cheese makes all the difference!

A couple of the easiest meals we make:
1. Bacon, Cabbage and Noodles! Fry the bacon, then take that out of the pan and put the cabbage in (with the grease!) and in a different pot be cooking the noodles...add together and you're done. Maybe put a little salt and pepper:)
2. Farmers Breakfast. Cook up potatoes, an onion or two and sausage or bacon. Then add as many eggs as your family needs...we do 2 dozen lol:)
The easy meals are nice, aren't they?! Hope you're feeling rested this morning!

There is always a jar of spaghetti sauce in my pantry just for days like that. I remember hoping that my everything-made-from-scratch, German mama wouldn't find out my secret until she stayed with us awhile back. She saw it,shrugged, and said "a mama's gotta do, what a mama's gotta do." :) Phyew! Thanks for letting us know we're arent' alone.
Mine is "Salsa Chicken" :o) One jar of salsa, one can of diced tomatoes, a bag of frozen chicken breasts: pressure cook for 15 minutes, serve over rice. There are so many different varieties of salsa you can have it 3x a week and have a different meal every time!
