Can you say "KEEN-WAH"?



Greek Quinoa Salad

With only 3 chicken thighs leftover from the night before I knew I would have to have a substantial side dish to complete the meal.
Earlier in the day I had come across THIS recipe over at one of my favorite cooking blogs...
"For the Love of Cooking".
I have tried many of Pam's recipes and have not had one fail me yet!
I had all of the ingredients, including the itty bitty bit of parsley called for, cause I had just spotted some in the garden the day before!

For those who do not know what quinoa is:

A highly nutritious gluten free seed, originally from South America. It's mild, slightly nutty flavor makes it a terrific substitute for rice or couscous.
An exceptional source of protein, it contains all 8 amino acids, making it an excellent option for those looking to reduce their meat consumption.

For me, it was the perfect side to those thighs!
It will surely be one I make again over the summer when cold salads really shine.
Real food. Real good.


And now I am going to rest my weary bones after working in the gardens for a few hours today.
(And I was happy to do it!)

Now...

Can somebody please tell me to stop hoiking up stuff that would be/should be flowers?
You know in the spring, nearly EVERYTHING looks like a weed...
And before I know it, I've hoiked up yet another one.
It's like when you are running the vacuum,
and you SEE the dang bobby pin, but you suck it up regardless.

Quinoa is wonderful I throw it in soups and stews all the time and it's a great side fixed many ways. And it's fabulous for diabetics, it won't raise the blood sugars live some other grains do. Thanks for this recipe!

I know the feeling, but my story was a little different.I have not mowed for several days for two reasons,the medical procedure I had done, and the rain. Nevertheless,Black Eyed Susans were coming up everywhere, and I saw them and told myself I would transplant several of them since the summer is so hot, they are one of the few flowers that can stand the heat.Today was my day to spend with Mom,and when I returned home the grass was mowed and the flowers were all gone.How could I be upset, when HE hardly ever mows.
HE mowed today to keep me from doing it.How sweet!

I love Quinoa! Mixed it in with a green salad tonight, with Thyme, Tarragon, Savory and Fennel tops mixed in with lettuces, cucumber, peas and broccoli. Very yummy. Your's looks real good too.

Ha ha! I do the same thing. pull up everything that is green and might look like a weed.

I've never used quinoa. I heard it is good, though.

A weed is nothing more than a plant where you don't want it to be growing. -smile-
White potatoes and blueberry bushes were planted today; Yukon gold potatoes, onions, squash, pumpkins and gourds are next. I'm late starting seeds but going to do it anyway. Around here the ground doesn't warm up until June and our frost date is 15 May.

Oh yes - I pulled up some plants I thought were weeds today - only to realise they were tiny broccoli plants - I replanted them, but I hope they recover my rough handling of them!
That quinoa sounds very interesting - I've never heard of it before. Looks delicious though!

Thanks for the recipe! We like Quinoa but I don't have a lot of ideas for it. I learned a new word today; "hoiking". Now I know what to call it when i do the very same thing.
