LOOK FAMILIAR???


This, my friends, is my breakfast/lunch.
Began assembling this lovely piece of work around 10:30 AM, began nibbling at 11:00, and plan on finishing it over the course of the next 2-3 hours.
Dinner will be some wonderful orange roughy with a green sauce, and possibly some rice with spinach. I'd like to say I eat this way ALL the time, but unfortunately, that is just not the case.
A little too much bread, a bit too much pasta, and over the winter I have packed on 12#.
Add this to the fact that the knees have been hurtin' like the dickens, and therefore, there have been NO workouts since about June.
Now ladies, just 4 short years ago, I was running 3 miles a day,6 days a week, training for my very 1st 5k race, and weighed 126# on race day. I went on to lose another 4# over that summer, and kept it off for a couple of years.
I have backslid real bad.
For right this minute, I can't do anything about the physical ailments, (tho I am scheduled to see my doctor in April), but I CAN do something about what I am eating.
So, this wonderful salad consists of:
romaine lettuce, tomatoes, cukes, a leftover bit of avocado, red onion, a couple of whole grain croutons, broken in tiny pieces, a very few slices of almonds for crunch, a teaspoon or so of gorgonzola (a little goes a LONG way when it comes to gorgonzola!), diced chicken breast, and topped with a drizzle of Julia Child's simple vinaigrette.

Just had to show the comparison between our duck egg on the left, and the grocers egg on the right!
The ducks are mating like crazy, and a walk around the pond on any given day will usually result in a found egg or two! Farmboy mixed these up for his french toast breakfast this morning!
Am seriously thinkin' on getting some more hens this spring.
Nothing like farm fresh eggs from your very own chickies.

The egg on the left also kind of looks like free-range chicken eggs. They are usually more orange. Enjoy your meal!

you know girl, I'm in... you're 'bout the only female I can rant and race with (to)...

I've kinda lost that "thin feeling" I had in Sept.
but it's only about a week ot two away (4#) and it's back....and then you might be here and we can rant and racve some more!!

I am right there with you on the knee thing. I KNOW I am alot less active since they started hurting so badly. My weight is about the same..but wasn't so good to begin with. Your "brunch" looks wonderful. Much better than the tomato soup and apple I had at work today.
Your supper sounds like it will be so good too. I havn't had Orange Roughy in quite awhile..and I LOVE it. Have a great week!

Spring happenings here are 2 new raised beds going in. Each will be 4 x 8 this year and 12 " deep. We are having to put in a fence around them due to a groundhog taken' a liken' to my garden from last year. Thank goodness for chicken wire under the bedding. Good to hear you are doing well.

Hmm... I have had my own weight gain recently- from unemployment! Seriously, sitting around is no good for me. What are my plans to eat healthy and lose a little? I guess I have to start eating salads. :(~ I'd rather have a burger...

There's nothing better than farm fresh eggs! We have ducks and chickens both and I love them!

Looks delish! I can't wait to have homegrown veggies to eat. Yep, I'm getting some hens too...Dh hates chickens, but since he has his 3 pigs he will have to put with my chickens. My weight has come down due to stress. I spose ongoing stress is more harmful to the bod than losing weight. My blood pressure is still too high, even tho I've lost weight. I always feel so much better in summer and fall when I can get outdoors and garden/work/ sweat/walk. It helps my attitude. Maybe they balance each other out. When I'm happy I get fat 'n happy.lol Love ya! Enjoy your salads and spring. Jen

Aidans spring allergies are driving his crazy so I am considering joining him in a couple weeks of no wheat, no dairy. NOT FUN but will surely help the littel guy feel better!
Did not know you could eat duck eggs. Cool. How about duck liver - that's more like it! (Paté)

That salad looks so delicious. I am really into salads right now. I hope I can lose a little weight. I have put on 6 lbs. this winter and am ready to get it off.

Holy cow! There is a big diffrence in the eggs!! We are trying to exercise more and eat smaller portions this spring!!! :)
