It amazes me how this mess of veggies and meat (the "after" photo)
turns itself into...
this....
After just an hour of roasting the veggies then mixing them with about 8# of chicken wings and simmering on the stove for 2-3 hours.
10 quarts of homemade chicken stock ready for spring soups.
Like potato leek soup.
Or spinach soup.
Or tomato soup.
YUMM-O!
And easy-peasy!

Very Nice ... I have to make homemade stock again... like I used to... it's been too easy to add a dab of Minor's chicken base... acceptable... but not - mmmmmm delicious!

Looks good - I'll be pulling mine out of the freezer for risotto this week!
Just would like to ask...do you keep the veggies and chicken for soup or use it only for the flavor then toss it? This sounds like something I need to do as I hate buying the canned broth and like to make my own but it's time consuming!
XOXO

Love your cute kittens!!
delish! I would kill for something homemade lately! I'm so busy moving I have not had the time..thanks for the support you are so sweet to me my friend:) xo
I may have to try doing this sometime. Yesterday I made chicken and noodles and had all sorts of chicken parts left over!
This proves you have superpowers. lol. Looks good!
Hi Cyn,
I've never roasted the veges and chicken first. This would give a lovely flavour. We can learn something new every day. Really enjoy you writings.

a girl of my own heart :)
we are just two busy women no?
And to answer all your questions:
- hubby is a self-employed carpenter (custom built homes to amazing arbors in the garden)
- I do all the gardening
- I have the permit for my garden shop....but since I have 5 children that are all under 12, well, it's a WEE bit hard to get that one going :) if you kwim....
Thanks for all your questions! I love answering them....
You have inspired me to do this! It looks so wonderful! We had crab legs a few weeks ago (they were totally on sale...believe me...lol!) and I kept the water we cooked them in as stock. I used it when I made some chowder this past Tuesday and it made a huge difference.
Thanks for sharing! I love your blog!!
