Zucchini Lasagna

 Homemade ricotta and garden fresh basil

Faced with zucchini from the farmers market and a small bowl of homemade ricotta, I recalled seeing a recipe for a vegetarian lasagna earlier last week.


 Layered and ready to bake!

It took me a while to hunt down the recipe...
Had I seen it in a magazine?
Did someone on Facebook post it?
Or was it one of the many blogs I peruse throughout the week?
Gah!


Hot out of the toaster oven!

Finally!

Found the recipe at Stetted...a blog I had just recently come across.

Of course I switched it up just a bit...
Added some italian sausage I pre-cooked...
And used my own homemade ricotta.

It was...
delicious!

Since the recipe makes an 8x8 pan, I was able to fit it in my toaster oven.
And because temps were so wicked hot last week (like upper 90's!),
I put the toaster oven outside so the cooking was done away from the kitchen!

This is definitely a recipe I will make again.
And again.

And though our temps have gone down to a  comfortable 83 today, we have more of the hot stuff on it's way.

How are YOU coping with cooking in this blistering hot summer heat?

More cold entrees?
Salads?
Simple egg suppers?
Grilling?

We do a bit of everything, but mostly we are out at the grill come supper time.
My own rubs and salts, available at my other site, Farm-Fresh, have been used on a regular basis and have turned the mundane chicken breasts, beef, and pork chops into meals with new flavor profiles!

Ooh...in a bit of other news...I have gone gluten and sugar free for a season.
Dealing with some health issues that I hope I can clear up with some wheat and sugar eliminations.
Can I do it????

A bumpy road for me, as I am a wheat lover for sure.
Sugar...not so much.
But take away my pasta and my sourdough bread, and I could get feisty!

A low carb diet is my reality. I LOVE making lasagne with zucchini and/or eggplant. Both are yummy varations. I also use Dreamfields Pasta very, very occasionally and it is very good (lots of very there, lol). Wishing you the best going SF and GF :)

Good luck with the gluten free...it would about kill me too! My sister and brother in law love the citrus salt on grilled chicken. And anything to keep her eating right now is great. She enters her second round of biochemotherapy on Monday.

Gracious, now don't get feisty! LOL. I hope the diet adjustments help you out! These days, we're eating lots of things grilled and plenty of salads.

I love vegetable lasagne. I make up a batch in several small containers and freeze it to cook later when my hubby isn't home because he doesn't like it.

This looks so good,Cyn. Yes you can do it, I gave up sugar last year lost 40 lbs. and I am so ashamed to admit it but got back on it at Christmas and gained all of my weight back. I too had to do this for health issues. I felt so much better, and now find that I ma struggling for energy. I applaud you and will pray for success. I have wanted to get back to not eating sugar and have wanted to go gluten free, so I am now motivated. Thanks for sharing.GOOD LUCK!!!

best of luck to you with your new dietary restrictions. It's so hard to get used to eating a new way.

I hope you're able to solve your health issues with this diet, meanwhile, the recipe looks delicious. I will have to give this a try.

As for being comfortable, any temps past 76 degrees are awful for me. I have acclimated to the Pacific Northwest temps and suffer terribly when the temps pass the 80 degree mark.So, shade, iced tea, and not too much physical activity are my prescriptions for high summer temps.

This looks amazing! My dietary habits, lately, are in the toilet. I'm happy if I can get a protein shake down me once a day. I know it's not good but the best I can do these days isn't very good.

I developed Celiac disease (and an egg allergy) a few years ago and have 100% GF (minus accidental contamination) ever since. I honestly can't begin to put in to words how much better I've felt since going gluten (and egg) free, and hope that the same is true for you, dear Cyn.

Hey Cyn - that's a great looking dish there. Unfortunately I didn't grow eggplant, so I'll have to get some at the market. I doubt my silly hubby would eat it (he'd say it's womens food) but it would be right up my alley.

Best of luck with your new diet. I have a good friend with celiac and his wife does such a good job of finding yummy things that he can eat!

Have you posted somewhere how to make homemade ricotta? I'll have to go look...Sorry your garden didn't make it - I'm trying to decide if I want to do a fall garden...

Cyn- You CAN do it! I finished my first Whole 30 a few weeks ago. And now, I hardly ever even miss grains. Weird for me, but good!

Cyn, I was gluten free for 16 months between spring 2009 and fall 2010. I lost 16 pounds without trying.

I later learned it was stress, not gluten, that was causing the problems. But for the most part, I felt better without the gluten. And I discovered some great GF products.

It was almost impossible to eat GF at professional meetings and cocktail parties.

Cyn, how do you like your toaster oven? I've been thinking of getting one because it seems so costly to heat up the cook stove oven.
The lasagna looks amazing; I bet I could almost eat the entire pan! How do I cope with the heat? Cheese and crackers. Since Dave died eating is so hard for me and there are many, many times I just go to bed hungry because it's simply too much effort to fix something to eat. I probably shouldn't admit that, eh?
